In this video, I cook pork lemongrass meatballs. Lemongrass is used in a lot of Southeast Asian recipes. My pork lemongrass recipe is packed with bold flavors and spices.
Lemongrass Pork Meatballs
3 stalks of lemon grass
1 knob of ginger
3 cloves of garlic
1/4 cup oyster sauce
2 TBS hoisin sauce
1 tsp of rice wine vinegar
2 TBS brown sugar (optional if you like it sweeter)
2 tsp coriander seeds, toasted
1 tsp black peppercorn
1/4 tsp turmeric powder
1 red Thai chili pepper (optional)
1 lbs ground pork
1 TBS cooking oil
1/4 cup cornstarch
1. Chop bottom of lemongrass in pieces
2. Roughly chop ginger
3. Peel 3 cloves of garlic
4. Chop onion into small bitesize pieces
5. In a food processor, combine lemongrass, ginger, garlic and red Thai chili pepper and process and set to the side.
6. Toast coriander and black peppercorn seeds to release the flavors and oils.
7. Grind coriander and black peppercorn
8. In a separate bowl, combine oyster sauce, hoisin sauce, fish sauce, brown sugar, and rice wine vinegar and mix. Add 1/4 cup of the processed lemongrass, ginger, garlic and red Thai chili pepper into the sauce and mix until combined.
9. In a large bowl, add in ground pork, onions, coriander and black pepper corn powder that we ground earlier (2 tsp), turmeric, and lemongrass sauce (reserve 2 TBS of lemongrass sauce). Mix until combined.
10. Use a mini ice cream scooper and form your meatballs.
11. Toss meatballs with cornstarch and shake any excess cornstarch off.
12. In a large skillet, add cooking oil and sear the meatballs on all sides.
13. Transfer seared meatballs to a tray lined with parchment paper.
14. Bake at 400 degrees for 10 minutes, and flip them to the other side and bake for another 8 minutes.
15. Take them out and brush with the reserved 2 TBS of lemongrass sauce and turn oven to broil and leave oven open while the meatballs bake for another 2 minutes.
Serve alone as an appetizer and sprinkle with sliced green onions and sesame seeds, or eat with rice or make a bun vermicelli salad.
Yields: 24 meatballs
