This is the first meal I was ever taught how to cook. It's a delicious Thai recipe, full of nutritious ingredients and bags of flavour. The recipe is below and you can find many more quick easy meals in my Cook Book!
2 tbsp coconut oil
2 shallots, diced
1 stick of lemongrass, bruised
thumb-sized piece of galangal or ginger, peeled and grated
3 garlic cloves, finely chopped
400g skinless chicken breast or firm tofu, cut into 4cm-thick slices or cubes
400g tin coconut milk (or 2 tbsp coconut cream mixed with 330ml hot water)
3 kaffir lime leaves (optional)
1 fresh red chilli, split lengthways and deseeded (leave the seeds in if you like it hot!)
2tsp of fish sauce (optional)
leaves from 3 Thai basil or regular basil sprigs, roughly chopped
2 tbsp soy sauce
200g pak choy (or any dark green leafy vegetable), roughly chopped
¼ head red cabbage, shredded
300g cooked black or red rice
