To make Goan style raw mango pickle you require 👇
* Raw mangoes - 9 nos.(small-med.) / 1 kg.
* Sea salt (Goan)- 4 tbsp or 1/4 cup
* Spicy red chilli powder - 1 tsp or as per your spice level
* Kashmiri red chilli powder - 4 tbsp or 1/4 cup
* Turmeric powder - 1/2 tsp (optional)
* Mustard seeds - 1 tbsp + 1 tsp
* Fenugreek/methi seeds - 1 tsp
* Hing/asafoetida - 1/2 tsp
* Cooking/vegetable oil - 1/2 cup
* Mustard oil - 2 tbsp
Note:-
* You can use mustard oil instead of cooking oil or 1/2 portion mustard oil and 1/2 portion cooking oil
* Adjust masala as per your spice level/ as required.
* before adding oil to the pickle, cool down completely.
* If you want to increase the shelf life of the pickle then heat oil as required, cool down completely then pour in the jar and it should completely cover the pickle.
