To make Goan style raw mango pickle you require 👇
Raw mangoes - 9 nos.(small-med.) / 1 kg.
Sea salt (Goan)- 4 tbsp or 1/4 cup
Spicy red chilli powder - 1 tsp or as per your spice level
Kashmiri red chilli powder - 4 tbsp or 1/4 cup
Turmeric powder - 1/2 tsp (optional)
Mustard seeds - 1 tbsp + 1 tsp
Fenugreek/methi seeds - 1 tsp
Hing/asafoetida - 1/2 tsp
Cooking/vegetable oil - 1/2 cup
Mustard oil - 2 tbsp
Note:-
You can use mustard oil instead of cooking oil or 1/2 portion mustard oil and 1/2 portion cooking oil
Adjust masala as per your spice level/ as required.
before adding oil to the pickle, cool down completely.
If you want to increase the shelf life of the pickle then heat oil as required, cool down completely then pour in the jar and it should completely cover the pickle.
