To make Karela achaar/bitter gourd pickle you require 👇
* Karela/bitter gourd - 12 nos.(small-medium)
* Mustard seeds - 1 tsp
* Fenugreek/methi seeds - 1/2 tsp
* Hing/asafoetida - 1/4 tsp
* Kashmiri dry red chillies - 15 nos.
* Garlic cloves - 8-10 nos.
* Dry tamarind - small marble size
* Jaggery - 50g or 1/4 cup (adjust as required)
* Turmeric powder - 1/2 tsp to marinate+ 1/2 tsp for masala
* salt to taste
* refined oil - 1/2 cup
* White vinegar - 1/3 cup or as required to grind masala
Note:
adjust salt to taste, jaggery and spice level as required
For good shelf life without refrigeration add more oil so that it covers pickle in the jar (for this Heat oil and allow it to cool down completely then only pour in the jar).
