Buffalo chicken wings are one of my favourite dishes, and it's hard to beat them. In this recipe, ill give you the secret to achieving the best flavour and crispy shell using one simple trick. Please enjoy.

1.6kg (3.5lbs) - Chicken Wings, Drums & Flats Separated
Salt To Coat Lightly
Sunflower or Vegetable Oil For Frying
Buffalo Sauce -
100g (3.5oz) - Unsalted Butter
2 Bottles (300ml) - Frank's Hot Sauce
2 - Garlic Cloves, Crushed
1 Tbsp (20g) - Honey
Blue Cheese Dip -
4 Tbsp (110g) - Mayonnaise
2 Tbsp (60g) - Sour Cream
1 1/2 Tbsp (30ml) - Buttermilk
1 - Garlic Clove, Minced
1/4 tsp (0.5g) - Yellow Mustard Powder
50g (1.7oz) - Blue Cheese, Grated or Crumbled
Seasoning To Taste
Serving -
Carrots, Cut Into Batons
Celery, Cut Into Batons

I really love how you explain why you do certain things. So maybe videos on general cooking skills? Techniques? I feel like the real thing about being "able to cook" is to be able to combine different techniques and different meal parts (sauces, frying styles, breadings) by oneself instesd of always having to follow specific recipes. Please keep the meal prep! More salads would be great as I want to eat them but I am very picky...

I would love to see a meal prep episode of a low carb high protein dish for after the gym meals. Not keto, but no pasta rice ect. The meal prep series is awesome btw 👍🇬🇧

Hats off, Jack! I love chicken wings. And I have heaps of recipes for them. So many, that my sister in law once suggested, I should write a book only about wings. My answer was: "If I do so, I'll made it a trilogy. To be named "Lord of the wings." " Your recipe is the 1st I've seen, drying the wings in the fridge. Sure gonna try this! My best recipe for wings (or legs. I would cut litte slits in legs.) on the grill goes like this: since chicken can easily burn on the grill, I cook 'em in salted water or stock until done. Than marinate them in: 3-4 cloves of garlic, roasted a bit in veggie oil, add 1 tbsp each of light soy sauce, sake or shaohxing wine and honey, 5-6 tbsp of ketchup, a pinch of salt. Heat off once combined. Add 1 tbsp black soy sauce (for colour) and 1of 2 tbsp of hoisin sauce. But wings and sauce in a ziplock bag (preferably, while both are still warm), massage a bit and marinate for at least 2 hrs. They only need to be warmed up on the grill. 1st made that some 35yrs ago, when riding to a party. 2hrs was the estimated time , that ride would take. Greetings from the far north of Germany! Suggestions: since it's summer up here, I love bbq sides. My last 3 where a salad from garden raddish (finely sliced). Sugar, salt and mustard added. After some 15 minutes, salt and sugar have drawn enough moisture from the raddish to make a vinaigrette. Add italian parsley and some very finely diced onion. Onion salad: soak finely sliced red onion in salted water for 20min. Stir lemon juice into peanut butter. Queeze out the water from the onions. Combine. Season to taste with salt. Dressing for i.e. roma salad: shake same amouts of olive oil and lemon juice. Season with honey. Drizzel onto cut-open pieces of salad.

Two big points you hit on that I love: 1) proper angle of cutting to separate drum from flat 2) do not use high heat and break the sauce

Looks real good. My dad and I make wings about every other Wednesday and we use the air fryer. They always come out better than getting them at someplace like Buffalo Wild Wings. Bdubs sauces are good though

I made this last night. Dipping sauce 5 points out of 10. Hot sauce for wings 7 points out of 10. Wings overall 7.5 points out of 10. Even better when the leftovers were reheated next day wrapped in foil in a 180 degrees oven for 25 minutes. The coating sauce seemed to dry into the skins and present an evn better texture and flavour. To improve it needs some work but overall satisfactory.

Definitely, and I still recommend the blue cheese sauce for those that don't enjoy it on its own. The flavours are outstanding combined with the other ingredients and you can't taste the strong flavour of blue cheese on its own.

Those are beautiful looking wings. Great suggestion to use fresh garlic instead of garlic powder. To make my sauce even more on the tangy/zippy side I like adding about a tablespoon of white vinegar.

Great recipe, but I can get them super crispy by sprinkling the whole wings with a spice mix that includes half a teaspoon of baking powder and then air fryer them for 15 minutes.

What if you wanted to bake them? Same process essentially? But instead of the oil you just throw them in the oven?

You can bake them, yes. Cook them for about 20-25 minutes in the oven at 190.c

That would be gas mark numbers. Usually 5-6 is 200.c

Drain it and use it again. Run it through a sieve into a funnel and put it back in the bottle. Only do this when it’s cold
