Light Soy Sauce vs Dark Soy Sauce vs Thick Soy Sauce - WTF?! 

I am really impressed you are so knowledgeable! 👍 I’m Korean from Russia and my grandfather and grandmother made homemade soy sauce. Just because in USSR almost no one knew about soy sauce and it was impossible to buy it in the grocery.

Especially the different ways you use each sauce, especially the longevity (I loved your explanation of how long each will last once opened and/or used but especially once it’s past it’s use by date and how to buy and store each, Thank you so much bc you truly explained the questions I had for that thick soy sauce. I’ve been wanting to step onto new territories & I want to try many new sauces and so this was really a great eye opener for me so 2 Huge thumbs up from me.

Thank you. I've been cooking a lot of Asian recipes lately and was really curious about the difference between light and dark soy sauce. This morning I made some stir fried oyster mushrooms in garlic butter (delicious). I left some of the baby mushrooms on the stalk and put them back on the paper towel on the shelf in my fridge. Will these continue to grow so that I'll get two batches of mushrooms out of one stem?

Why are there recipes that call for both light and dark

I bought dark soy sauce because I didn’t realise there was a difference in use. I should have bought light 😢
