That looks delicious. I had another idea while looking at the finished product.... You could toss them in wing sauce and find V blue cheese and pickle and have a "kickin lion sandwich" instead of a "kickin chicken sandwich", LOL I can't wait to try this lions mane. I ordered a log to grow my own. 🙏

No anger, no anxiety, so awesome! My only issue was, “how to making them tasty?” & I’m impatient and a simple cook. This recipe is delicious! And I’m so grateful during this quarantine! It killed me to sends my kids to chill w/ me ex, since I’m a breast cancer survivor, & higher risk. My daughter came home this morning, frustrated not to b sleeping in her own bed. Luckily, I woke up energized at 4am & tried your incredible recipe, which is like a cross between a jumbo lump crab cake (I doubled the old bay, cuz this is Maryland!) & mild buffalo cauliflower. I loved the texture of the larger pieces! Yum! The salt to maintain crispiness, is brilliant! My daughter loved it, & she hates, actually gags, just seeing mushrooms! I didn’t have Cajun seasoning, so looked up & added what we had. Used hemp milk, & had to add more to make batter a bit thinner, so easier to dip & coat the lions mane. The batter protects & enhances the mushroom, maintaining the meaty/lobster texture! Other recipes that sauté, can result in a slimy, butter, (or oil) drenched taste. I loved it! Loved the pickles. Used soft potato, & Hawaiian rolls. We ran out of pickles, so for our 2nd helping, we used cabbage slaw (put in the pickle juice) my daughter added packaged spinach & kale, & it was delicious, healthy, crunchy! OMG! This is my new favorite meal! Shout out to my older daughter’s vegan friends who spoiled me w/ lions mane crab cakes. This recipe delivers the deliciousness, in 1/3 the time, & 1/3 the ingredients!
I grew some lion's mane mushrooms from Nearby Naturals and was looking for something yummy to make with them. This was the BEST recipe I found!! I used brown rice flour and air fried the coated mushrooms. We've had these sandwiches twice now. YUM! Thank you! I've now subscribed to your channel.
You used a batter and it turned out ok in an airfryer? Didn't think that would work. Usually if I do any breading in an airfryer I'll coat whatever it is I'm cooking with a light layer of mustard then dip in panko bread crumbs and spritz with oil. Comes out browned and crispy.

Lately I've been stocking my fridge with Ripple milk. It's made from peas and has a thick creamy texture that you normally don't get from many nut bran milks. Definitely give it a try. It's always fun to branch out and try different vegan products =)

I'll be cooking these for the first time,could you recommend a different oil perhaps the avocado oil with high burning cuz I'm not liking the oil you suggested
Nothing wrong with vegetable oil of you keep it under 400 F. If you want to cook at higher temp tha avocado oil will work but peanut oil is used more for frying at higher Temps
Also, I don't know how this batter recipe will hold up in an air fryer. You might want to make a lighter batter with less flour. Also, you'd probably want to air fry them much longer vs frying in oil
