Ingredients:
1 1/2 quarts filtered water (use spring water if you don't have a good filter)
1 tablespoon sea salt
2 medium or 1 large beet (about 2 cups of chopped beets)
Mix everything together and cover with a paper towel and rubber band or clean cloth. Set the mixture away in a cool dark place for 5 to 7 days. Store in the refrigerator for up to two weeks after fermenting is done. No need to remove the beets.
