I grew up in early 50s and family did not have a lot of money We had creamed tuna, creamed chipped beef, creamed hard boiled eggs, and stewed tomatoes on toast. I still make them because they are comfort food for me. We also in the spring when the peas came in and new potatoes from the garden would have creamed peas and potatoes.

I know it's not the season but tomato gravy is delicious! I think I first saw it on Deep South Homestead but I can't remember. Sounds weird but it's amazing using homegrown tomatoes. One of our poor man's recipes growing up was called "S.O.S" ("stuff" on a shingle). It was basically a gravy with hamburger meat that was peppered really well and served on top of toast. We'd do a side of green beans or peas. So good. And mom's salmon patties.

My mother was a depression baby. She was raised on farm in coastal Maine. Here it was called Shrimp Wiggle, Salmon Wiggle or Tuna Wiggle. Toasting bread till browned in skillet adds another layer of flavor. Also for a change this was occasionally served on rice or pasta. Salt, Pepper, & Paprika. Dill and Parsley are good additions adding flavor and color.

Tomato Dumplings. Stewed tomatoes with dropped dumplings on top. Tasty and filling. Smoked salmon lasagna. Noodles, salmon, cream sauce, cheese and I top it with a little stewed tomato. My mum used to spread applesauce on toast, sprinkle a little nutmeg over and top with grated cheddar then put it under the broiler just til the cheese was toasted. It was surprisingly good.

Love this!! Creamed chipped beef is a dish I grew up eating. We just called it SOS (sh*t on a shingle). Mom made it and I loved it. Try this....cut Kielbasa into slices then quarter the slices, then fry in a pan to crisp them. make a white sauce/alfredo sauce. Make a pasta of choice. Mix all ingredients together. I use elbow pasta or make homemade, thick/wide cut noodles -keep the noodles long or cut into inch long pieces. So good.

When I was growing up we had: chipped dried beef on toast, it was basically a white cream sauce with chipped dried beef, we had Welsh rabbit which is a white cream sauce with melted cheese through it and a little paprika or cayenne pepper served on toast or over crumbled saltines, or tuna wiggle which was basically a bechamel/white cream sauce with crumbled up tuna and canned sweet peas. We would use the juice from the peas to help flavor the cream sauce and we served it on saltine crackers either whole or crumbled up whatever was your preference. When we had these though they were not like a gravy they were a large pot of white creamed sauce or thick bechamel and you would ladle it out onto either the toast points or the crackers. Tuna and shrimp wiggle still are family favorites to this day. We also had egg gravy over mashed potato served with fish (best with salmon that we had caught) usually haddock a fresh-caught white perch or salmon.

My dad was born in 1938 in North Central Arkansas. He lived with mostly around my Grandmother's family who were farmers and raised and grew their food. My Grandfather's family had a country store and they did live a simple life but food wasn't an issue. My dad was a trained mechanic and raised us in town. Now I've returned to homesteading and growing and raising my own food. I worked as an auto repair painter for fifteen years then taught auto collision repair for twenty seven years. I've been homesteading full time since 2016, wish I had gravitated to this life style twenty years ago.
