Ingredients: 4 Potatoes (about 1 1/2lb) peeled and diced into 1/2” pieces 1 Yellow Onion, diced 4 Tbsp of All Purpose Flour 4 Tbsp of Unsalted Butter 8 Slices of Bacon 3 cups of Chicken Stock 3 cups of Whole Milk 1/2 cup of Sour Cream 1 1/2 cups of Shredded Sharp Cheddar Chopped Green Onions Salt and Pepper, to taste
I made this for Christmas Eve 2021. The recipe was posted 6 years ago, but that doesn't make it any less current. It's excellent without any changes. Anytime I try a new recipe, I make it exactly as per the directions. The next time I may try a variation or substitution. It was so good that I made it again 5 days later. I substituted plain yogurt with a tbsp of vinegar because I didn't have sour cream. I also used 2 cups of whole milk because that's what I had left over from the holidays. I still got the same great taste. I know there are many potato soup recipes, but I chose this one, and I'm glad I did.

Remove to a paper towel lined plate using a slotted spoon and set aside. 2) Discard any fat that the bacon rendered and add the butter and onion and saute until the onion becomes translucent and develops a bit of color, about 4 to 5 minutes. 3) Add the flour and stir constantly for 1 minute, add the milk, stock and potatoes and bring to a simmer and cook for about 20 minutes or until the potatoes are tender. 4) Add the sour cream, cooked bacon and cheese and stir everything together and cook for 5 more minutes. 5) Adjust the seasoning to taste and serve.When you’re ready to serve, sprinkle some chopped green onions over the top with a little extra sprinkle of cheese. If u are using this recipe: don't add 6 cups of liquid! Start with 2 cups of broth and milk and see where the soup is at after the potatoes cook up. My soup was watery and then I added the sour cream and it curdled! OMG- I'm so mad! Wait a bit for the soup to cool off before adding sour cream or just add a dollop to your bowl when ur ready to eat it . I did try the soup before I added the sour cream and it fine without. I will try this again but right now I'm so mad!
I made this for dinner tonight and I tell ya, the men in my life were very impressed with this soup and so was I. This will forever be on the top of my soup list! Thank you Laura..

Made this yesterday for dinner and me and the hubby just just loves it. I use cream cheese instead of sour cream, but its perfect. He loved it so much he wanted it for dinner the next night
Laura I made this soup yesterday I have made many many potato soups over the years but none has ever tasted as good as this recipe. I absolutely loved loved loved it! It was so delicious I will always make this recipe from now on thank you so much. I even gave it to my mom 91 year old mother a bowl and she said oh my dear sweetie this is the best you've ever made and I told her my compliments go to Chef Laura. Do your taste buds still work. I see you torture yourself by eating scorching hot food on every video. I made some soup the other day and tasted it too hot and my tongue was sore for a couple days.
Actually I do it also most Asians do, we prefer our soups boiling hot or else everything gets soggy (noodles.) I feel like my tongue has grown calluses due to this so nothing is ever too hot or spicy 😂.

I was just going to ask that! I don't eat pork. I'm pretty sure it'll be just as good without meat. Maybe just an extra splash of salt as a replacement? I'm making it tonight so I'll let you know :)
How do you like your baked potato? Just put whatever in it you put on your potato. It's not like having or not having the bacon will change it. Just the taste

Omg! I made this potato soup today and it was a home run. I did not have sour cream nor regular bacon so I substituted it for turkey bacon . When I tell you it was pot licking good. Laura you nailed it. Foe sure A keeper in my home..... Thanks for sharing this lovely recipe everyone loved it.

I made the soup 3 times. Its so good and simple. I added corn starch at the end to make it a little thicker. This is is well worth making....you will be glad you did. 👍
I want to pair this with a bread to serve to a large group. (church senior adult Christmas party) What would recommend? buttermilk biscuit, cornbread, French bread sliced?
