I'm an 18 year old girl and I've been having a really bad day and I struggle with depression, but I love to cook, even though I'm not the best as it, it makes me happy. And I practice all your recipes and I just wanted to say that when I'm sad, I watch your videos because they truly bring me comfort in knowing that you have such a strong passion for cooking like I do.

I am in my 70's and I have struggled with depression and ANXIETY for over 90% of my life.Medication has not helped.But my love of cooking especially for my family has saved me.Even when I am alone for long periods of time and don't feel like cooking for myself,I quickly go on RU-vid and watch my favourite shows like Laura,Jenny,Sara,and Clara(rip).I love intimate shows where ordinary,kind,friendly people invite me into their humble homes and make me feel so welcome.I am sure you have your favorites too.I don't have to even cook but they make me full in my heart.just being there!I wish you happiness and relief because I feel you 🙂💕

before her seafood risotto ep came out, I used this recipe and substituted the lobster w clams, prawns & calamari. Turned out great !!!!!! Give it a try if you want a tomato based seafood risotto.

I used the Lobster Risotto recipe, but used Mahi Mahi fish instead. I used a one lb. bag of the frozen boneless, skinless fish pieces from Trader Joe's, It cost less than five dollars for the fish, and I doubled the recipe for the rice part. Two more meals left over for the next day. Delicious!

So after watching this video I realized... Risotto is like a person. If you feed it too much stock at once, it'll choke. Except with risotto, you can't just do the heimlich maneuver and save it. You need to pour in the stock, let it chew and swallow, and then feed it more stock in the process Laura demonstrates.
you can eat it with whatever utensil you like, I have been eating risotto with a fork all my life and so do many people and I just don't think it tastes the same with a spoon.

I made risotto for the first time yesterday for food practical class. Made risotto milanese with some awesome osso bucco. This lobster risotto looks awesome! Oh, and those Italian rules were made to be broken! More cheese please!~

You can leave it out if you don't have wine. Or, I'm not too sure on how this would work with risotto but I usually sub it out for a tablespoon of white wine vinegar diluted in a 1/4 cup of water.

i personally do not believe that eating with a fork versus a spoon would make the food taste different, but come on people, be mature, stop whining and making dramatic comments about it. Laura is entitled to her opinion, and frankly she is the one who is sharing her recipe. if you dont want to use a fork, then dont, no need to keep posting about it....
Hi Laura, In Portugal we have a lot of dishes with several fishes and seafood. We make a type of rice with seafood called "arroz de marisco" - please google it online and make it, you'll love it for sure :)
Can you tell me what's that fish base that you added earlier when boiling the lobster? Where can I find that, and can I use substitutes? And also, instead of lobster, can I use scallop, prawns and salmon chunks?
