I would call that "burrito-al-horno". For me enchilada is a corn tortilla soaked on spicy red chile and stuffed w fresh cheese and chopped onion...but ok. Mario should know better: I think his parents are from Sinaloa (Mexico). His cooked meal is more typical Tex-Mex. MOST Tex-Mex food involves flour tortillas and any kind of yellow-ish cheese. Though I give him a 👍 in effort and for making it a healthier version.
