My daddy wasn’t always home when I was little because of what his job entailed in the military. When he was home there was almost always a fried chicken on Sunday-even if we had to go catch out behind the house. Daddy and I both loved the back and the wings. Since there were two wings we’d both “call” for the back at the same time. Mama started cutting the back in half so we each got a wing and we each got half of the back. Daddy passed away this last June just shy of his 87th birthday. Had he made it until July 4 th he’d been 87. We buried him with the love of his life at Ft Sam on July 11th and watching this video has just put the biggest grin on my face which is why I love watching y’all. Though I am South Texas born and raised mama would send me up to the Ozarks frequently when I was little when daddy was overseas because I was hard to keep inside. I was always being told I talked funny even now and you know what-me and God are just fine with the way I talk! Y’all have a blessed week to come.

Grandma always had fried chicken on sundays after church!! With pinto beans,gr beans,potatoes,cornbread, ect..and she always made me a choc pie all to myself.,hid in the back of the refrig..I sure miss those days!

My mom used to cut up the chicken and fry it in her cast iron skillet. She’d say, “Get a good scald on it!!” You sure brought back memories. We ate a lot of chicken because it was cheap. Bless your heart!

I also use self rising flour. It’s the baking soda that makes it very crispy. And 10 minutes at 350 f for white meat and 14 minutes at 350 f for dark meat. Marinate my chicken in buttermilk mixed with a whole bottle of frank’s red hot. Yum. It’s a labor of love and the family loves it. Thanks for your videos. Love them!

I'm wondering if adding corn starch to the flour mixture might add more crispness to it? (Chinese restaurants coat chicken in it before frying), but then again why fix it if it's not broken!? I sure do miss my Mama's fried chicken.

I am well into my adult life, but cutting a whole fryer was one of the first things I learned! Oh. I grew up in Arkansas btw! It was a Sunday thing for my family. Lol

New subscriber from the hills of north Georgia! I was raised up with my grandparents keeping animals, so I'm good at plucking chickens, but I always left the kitchen when my Grandma went to cut them up. My husband asked for fried chicken as his birthday dinner today, but the store was out of pre cut fryers. My granny is no longer with us, but as a child of the internet, I googled how to cut up a whole chicken. It brought me straight to you, so thank you so much for showing me how to do it. :) I always fry it up like my Grandma did, with buttermilk and bread crumbs, in a cast iron skillet full of lard. I'm off to check out the rest of your videos.

We call those 2 divets of meat on either side of the lower back the oysters or cook's treat. If I'm cooking, they never make it to the table!!

This brought back some of the best of my childhood memories. Grandma was from Oklahoma, raised on the farm. Every Sunday after church she would fry up 2-3 chickens ( so we could take some home), a big bowl of mash potatoes with lots of white gravy and fresh corn. Since Fridays were her baking day she always had pies and cakes, all made from scratch. No matter how many times I have tried to cook and bake, it was never as good as hers. I think I should have added more love to it. the recipe because she always loved to cook and bake. You remind me so much of her. Thank you for bringing back the wonderful memories!! Great video, thank you! I really felt your comment about the price of chicken wings. My wife and kids LOVE my hot wings, but I can barely afford them! In 2021 it's even worse. Yesterday they were $4.89 a lb!! The reason is the hot wing industry. They've driven the price up through the roof. The good news is that there's a million things you can do with the other parts of the chicken which are still pretty affordable.

Hi Mrs Lori! We buy our chicken and pork from local farmers too. My mouth is already watering at the thought of your fried chicken. A friend of ours gave me a deep iron skillet that belonged to his mom, when she passed. I cleaned off some rust and reseasoned it and it's perfect for frying chicken. I use Italian dressing to marinate grilled chicken but I never thought of using it for fried chicken. And self rising flour, aka Bisquick baking mix, brilliant! Mrs Lori, you got it all goin on in that kitchen of yours!

Another wonderful video Lori...I love the idea of using the "Ken's" Italian dressing as a marinade for the chicken pieces before frying ....talk about great Flavor!!! Also thanks for the refresher on cutting up a fresh chicken ...many folks dont know just how easy and cost effective it really is!!! But your finished product made me so hungry! That fried chicken looked amazing and I could smell it all the way up here in Bucks County Pa 😋...Please let Mr Brown know that we always called that section of the back bone "the oyster" and it truly is the best part of the chicken when cooked! My gramma used to make the best chicken. She was from AR and TX. Sadly she passed when I was little and never found her recipe. Haha I remember when she used to go out to the yard for a chicken. 🐓 Your kids and grandkids are so lucky and blessed to have you my friend! 💖😘🙏🏻

@@WhippoorwillHoller My Big Mama used to take a 22 pistol in her apron pocket to the garden and chicken yard with her. She called it a "hawg leg". We used to laugh and laugh every time she said it. I think she said it to make us laugh. She's been gone since 84 and I still miss her.

I don’t like a big bulky chicken either. We do so many things so much alike 😊Probably from being raised in the South lol. That plastic wrap trick is so stinkin smart😂. We cut them the same in the north...my grandfolks raised chickens. They had lived through two depressions. As a kid I was on survivors benefits so I learned how to economize. I loved how fresh our food in the country was. From garden to table. And I must say that I have no shame when having Thanksgiving at someone else's place when I ask for the turkey carcass. Because I'll take it home and roast until a dark brown then boil all the flavor out to make the best turkey noodle soup with my own homemade noodles. I feel very fortunate to have learned these things, the cooking and canning and growing. I suspect it's more of a southern thing not just for economizing but a longer growing season. At least if I moved south no one would think me nuts for wanting a garden.

It has been 35 years since I had good fried chicken. My Great grandma had the best tasting fried chicken. She raised her hens, and they where pampered too. Their meat was sweet and juicy. God bless my great grandma! 🐓♥️🐓♥️🐓

Been cooking chicken since 11 years old kinda weird to realize others don't know how to cut up fryers like this. Last week a friend 58 yo watched me to learn how. Never too late to learn I guess. Ooo just in time Mrs Brown. I am waiting for my cast iron to get here. I am sick of these dang useless pans for frying chicken. That is what I learned to fry in was the cast iron. My dear, sweet nona came from Italy. She could fry up the best fried chicken in her cast iron skillet. She just loved America and learned to cook some of our traditional dishes in addition to the dishes she cooked in Italy. We ate lots of chicken backs because they did not cost much. I was one happy girl when she put a big old platter of backs on the table. Thanks for another wonderful video and for bringing happy memories back to me. 🌻

I've used the bis-quick mix as the coating for my fried dishes this season and they do turn out crispier. To Dredge zucchini I used the bis-quick mix, egg bath, then the seasoned bis-quick mix, a small variety of seasonings there, just onion powder, garlic powder, salt, and pepper which made the nicest fried zucchini this year.

I love your sink! It’s so much like the one I grew up with and remember fondly. I’ve heard those really good pieces on the back called the oyster of the chicken. When I take the meat off a rotisserie chicken, I always treat myself to those “oysters”.

LOL....my Mom always liked the part of the chicken that was last to go under the fence....just like Mr. Brown. We kids always called it the backbone with tail but Mom always said, no it was the last part of the chicken that went under the fence. Brought back good memories, thanks.

Fried chicken and roasted chicken are my two favorite meals ever! My grandmother made the best fried chicken! She said that when she was a little girl ( she lived on a cotton plantation) they had fried chicken nearly every day... on the table with breakfast..

Deer meat is fabulous soaked in Italian dressing for an hour before frying don't rinse dip in flour and seasonings , it gets rid of the gamy taste and is wonderful

When I Would Go To The Country I Wouldn't Eat The Meat. I Heard My Aunt One Day Say Go And Buy Some Plastic Wrap , Because That Child Is Not Going To Eat No Meat Unless She See The Chicken Wrapped In Plastic And The Other Meats. My Aunt Had Pigs , Chickens , And Cattle . One Day I Saw Her Cleaning The Feathers Off The Chicken And It Scared The Mess Out Of Me To See What She Was Doing To That Chicken. She Had Wrapped Up Other Chickens In That White Freezer Paper And I Still Wouldn't Eat The Meat. So I Remember Saying To Her I Wanted City Meat . She Asked Me What Was City Meat ? I said The Kind In " PLASTIC " From A Store. After Playing Outside I Came Into The Kitchen For Something To Drink Without Her Noticing I Was There And Over Heard Her Telling Her Son How To Trick Me Into Eating The Meat They Kill For Food And Slaughter The Cows For Beef. 🐄 Being So Young , I Went Back Outside To Play And Forgot What Scheme They Were Planning So I Could Eat Their Country Meat .🍖 Well , I Ate That Chicken Anyway , Because They Showed Me The Chicken Wrapped Up From The Store And Convinced Me It Was City Meat. Well , Some Years Later I Found Out What The Real Story Was. She Just Re-Wrapped Some Chickens She Had Just Placed In Her Freezer And Removed The White Freezer Paper. My Aunt Had 10 Children . Seven Boys And Three Girls. She Had A Outhouse , A Well , No Running Water In The House , Vegatable Garden , She Canned All Her Foods , Raised Some Farm Animals , She Had A Huge Fireplace That Would Heat Up The Whole House , And Lived In The Remote Area , Where There Was A Few Homes Around Scattered. Everone Was Related. One Church, One School , And One Cemetary Which Made Up Her Community. It Was In The Woods Off The Hwy , And One Road Off The Hwy Leading To Her Home. I Remember A Cousin Would Sit On His Porch All Day. He Was Like Security When You Make A Turn Onto That Road. He Would Always Wave , But , By The Time We Would Drive 2 minutes Up The Road To My Aunts Home , She Would Be Outside Waiting For Us . This Was My Mother's Oldest Sister And My Grandmother Would Always Be Happy To See Her. My Grandmother Moved To Houston To Help My Mother And My Family , Because My Father Passed Away When I Was Only Six months Old Of A Heart Attack In His Thirties. I Can Appreciate The Country Now And Whiched I Didn't Live In The City. Houston's Traffic , Crime , Traffic , The Busy Life And Etc... I Miss Those Days And All The Fresh Foods From Out Of My Aunts Kitchens. My Aunt's Coconut Pies Was To Die For And The Tall Meruigne Lightly Toasted On The Top. , The Chow Chow She Canned That We Always Came Home With , And All The Sacks Of Corn🌽 , Green Beans , Peas , And Mom's Favorite Fried Corn She Would Fry Up And Freeze , But She Always Had Some Cooked On The Stove Ready For Her To Eat Once She Entered Her Door 🚪 Into The Kitchen .Between My Mother's 5 sisters and one brother They Would Sit Outside All Day Chucking Corn, Snapping Green Beans And Peas .And Would Watch All My Cousins And I Play On All That Land And Carefully Watch Us From That Well . It Was So Deep. My Aunt In The Country Also Lost Her Husband In A Train Accident The Same Year My Father Passed Then My Grandfather Passed Away With A Heart Attack That Same Year. So There Was Three Widows In The Same Year That Were All Alone Without No Help From Their Husband's Because Of Their Deaths . My Grandmither Was A Short Wise Woman That Was Strong In Hwr Faith In "GOD " Which Prayed When She Would Wakulla Each Morning And Would Pray Before She Retired For Bed At Night. She Was Strong For Her Two Daughters , Even Though She Had Just Lost Her Husband As Well. She Molded My Mother And My Aunt And The Rest Of Her Family On The Importance Gearing Their Children In The Church , Prayer , And Having Faith In The Lord. GOD FIRST IN EVERYTHING AND THEN FAMILY WAS A MUST IN HER REARING !! She Taught All 6 Of Her Daughters And One Son To Be Strong And Love One Another. My Grandmother Raised Six Fine Courage Girls Into Fine Respected Women And A Son That Was Spoiled By His Sisters That Ate Amazing Food !! They Were All Independent And Learned To Be Responsible Parents , Which Loved Their EAST TEXAS ROOTS !! They All Had Great Careers !! May My Mom And Grandmother And Three Aunts Rest In Peace Forever Including My Dad , Grandfather, And Uncle !! May They All Forever Shine From Heaven !! You Have Brought Back So Many Memories Of My Past !! Thank You So Much !! Love Your Channel !! 😇❤🙏🏽

I’m with you jeepgurl, as a child my father used to butcher chicken and I cried until my mother sent me in the house. I do love chicken cooked in all ways as long as I’m not watching the butchering. Fried chicken is my favorite.

This is Jimmy from Indiana. Yum Yum!!! My mom always fried her chicken in a large deep iron skillet. It was the best. I was always unsure about cutting up the chicken. Thanks for the lesson. My wife and I have a small homestead. We have some baby chicks and also a hen sitting on 10 eggs. We plan on keeping the hens and putting the young roosters in the freezer. My wife also wants to can some chicken meat. God bless!

My dad was a food inspector in Germany while he was stationed there. He taught us to soak all fowl overnight in a saltwater brine due to bacteria. I was sharing this with one of my elderly neighbors, she said she always soaked hers in a vinegar brine. I tried this overnight with vinegar and salt. It was the best, juiciest, and tenderest chicken I have ever made! My husband loved it! No vinegar taste either. I love your channel Ms Lori! I have learned so much from you! We did the opposite switch! We moved from Arkansas to Texas after my dad retired from the Army! I love Arkansas and miss it dearly!

@@Srjgal I use about 1/4 cup of salt in approximately 2 quarts of water. For the vinegar use 1/8 cup of salt and 1/2 cup of vinegar. I have a 8qt container that I strictly use for my chicken brine, just do not use metal. I have left the chicken in the brine for up to 2 days. Rinse chicken before cooking.

That's exactly the way I fry mine including the same deep fryer. It makes good chicken that way. Sometimes I forget to brine mine the night before and I get so mad. It's such a difference if you don't. God Bless you two!

You've brought back such wonderful memories of my mother standing at the stove frying chicken or rabbit. It was always perfect. I wonder did she ever burn anything? I never saw it if she did. Probably knew whatever she was cooking could not be easily or readily replaced. I'm thinking now, too, if I ever taught my kids how to cut up a chicken. They watched me do it often enough. I'll have to ask. HA! I yelled to eldest daughter in the other room (she's 38), and she hollered back "YES!" Then my 11yo grandson came in the sewing room and said, "That was the most random question I've ever heard anyone ask." Thank you for another great vid. Also, I would LOVE to see how you do your oven-fried chicken. When I was a kid, our lunch ladies made the best oven-fried chicken. I've never been able to replicate it. Pretty sure they used corn flakes. Thanks again!

Isn't that the truth, bacon, 5 dollars a pound, when we had our little grocery store, we sold farmers pride bacon, for 1.49 a pound, hamburger was less than 2 dollars a pound, and chicken was 99 cents a pound, bread was 59 cents a loaf, could go on and on, Groceries are ridiculous, xoxoxo

@@oceantiara My mom went to work when I was 11 had 3 older brothers one day I woke up and have being cooking and cleaning every since have loved it still. I am 68 and that is my way of given back to others, our daughter is a Principal at Elem, school and do for her teachers and volunteers and our son work for the city of Clemson,SC and do the same. Cooking is a way to stay happy for me!

I hav one my grannie taught me if ur interested? She always made pickled beets and saved the juice from them and added hard boiled eggs. Then she let them sit for about 2 wks in the Frig. Yummy!
