Thank you for sharing. Steve (Serious Keto) uses sodium citrate in his bacon, broccoli, cheddar soup just to keep it smooth and yummy. This makes perfect sense to me in this application. Enjoy!

My favorite nacho cheese sauce, using sodium citrate, is 1/2 pepper jack cheese and 1/2 yellow cheddar in water or low sodium chicken broth for an extra layer of flavor.

My thoughts exactly. I think water would be bihydrogen oxide (but maybe it is bihydrogen oxygen) which sounds like nasty tasting chemicals.

Agreed. I put chemicals on everything. Most used, is probably NaCl (salt). Guess what your organic foods are made of folks. That's right, chemicals! All matter is made of chemicals, including us. We just have to figure out which are bad chemicals to have in our foods.

Sodium citrate is magical. So good for keeping sauces emulsified. I use it in chicken bacon ranch casserole so that the leftovers don't break when reheated in the microwave. I always use it with cheese sauces!

Fun fact: you’re basically processing cheese in that first recipe. Processed cheese was created by taking the leftover ends of cheeses and emulsifying them to make them usable. It was literally the salt and cheese. I do this myself today. Shred the cheese, melt it in a pot slowly with the sodium citrate, no water, and pour into a mold. You get the same effect of the commercial processed cheese with just cheese and a bit of salt. The difference between the sauce and cheese block is lack of water and the ratio of cheese to salt. You can find a good walk-through over at Glenn and friends cooking here on RU-vid: ru-vid.com I’m not affiliated in any way with them, other than subscribing and enjoying the content. :) You’re so close to making your own processed cheese here. Edit; my wife reminded me you should really use a silicone mold if you do it as it makes it much easier to get out.

I watched a video by Gavin Webber where he shows how to make your own sodium citrate - which I did! i learned about the sodium citrate from serious keto channel. it's amazing stuff. the things it does for cheese are amazing and if you ever have excess liquid to drain from homemade totally fresh salsa, this makes a great sub for the water and gives fantastic flavor, or to up the nutrition you can use bone broth

UH-MAZING! i didnt end up with just a separated clump of cheese in a bath of heavy cream! Nachos are my favorite, too. I shred Cabot's Habanero Cheddar into a bowl, top with some salsa, drizzle over a teaspoon or two of heavy cream, microwave a minute, stir, microwave another minute, stir. (My microwave is old and weak. Your mileage may vary.) It's delicious with chips or pork rinds.

Hello Wes. I love your videos. You are so upbeat and have a kind nature to you. One thing that I take notice of his how you react to the food after you taste it. I love it when you point into the direction of the camera and turn your head away as if to say "I need a minute" your not saying that but that's what I get from it. Your style entertains me and educates me as well. I'm learning a lot about keto. I'm m relatively new to keto. I'm trying to learn recipes and how to prepare them. One of the things I need to learn is how to calculate macros in a recipe. I know you are busy, and probably get that question a million times, but I would appreciate it if you can tell me how you are able to calculate a recipe. Is there a recipe calculator online or something. Please help me I'm prediabetic at 367 lbs and I'm struggling to find the right meal plan for me so I can stick to with it. I appreciate your time and feedback. If I don't hear back from you no worries, I know you have a lot of viewers with questions and you can't get to all of them. There IS an American Cheese that isn't "cheese food". I don't eat it often but I'm glad I haven't had to eliminate it completely from my diet. People just need to read labels and ingredients but usually it is labeled as Deluxe American Cheese. It isn't as good for us as the hard cheeses but it isn't a chemical storm and full of bad oils.

The second one looked okay - maybe a bit lumpy and grainy. But the first one! 😍😍😍 Smooth and creamy and basically 1 carb by the time I eat the whole thing! 😂 I’m like you, Wes. Salty, crunchy snacks with creamy dips or spreads are my thang. And if cheese isn’t involved, so much the better! As far as I’m concerned, I think Annie over at KetoFocus is just great! I love her recipes.

Both of these look super easy, the one with sodium citrate looks like real winner! Although I might mixup an easy salsa to try adding in. I always.made me nacho sause with Mexican Velveta and pretty close to a equal a mount of a lower carb salsa. For me just plain (no salt or spice) nacho chips for dipping were my favorite chips to use, no matter what recipe I was making. I'm trying to find an heirloom masa or corn "flour." Someone on a page where I find a lot of recipes said that the older, traditional corn actually comes in at like 5 grams of carbs per serving. I would have probably have had none luck finding it in Denver, but I'm in South Dakota and I'm not so sure I want to go backto crazy Colorado. May be the mountain communities would be good, but it's a long dang drive!

I make nachos weekly, my cheese is just a quarter cup of heavy cream, a quarter cup of water and some of whatever hot sauce you like best in a small saucepan. Melt cheese into it a bit at a time while stirring until it's the consistency you like. It's simple as heck and dang good. Also works good on things like rice (keto and normal).

How was the sodium citrate once cold from the fridge? Was it still really runny or did it thicken? I LOVE Queso! Adding some green chiles and red pepper and spices would be really good. I wonder if this could be bottled to preserve it? Thanks for this Wes!!!!

I’ve made keto focus nacho sauce. I don’t use the extra water and the sauce comes out thicker just like the regular stuff. Keto focus is on point with her nacho cheese sauce recipe

Hey Wes! I love your vids and watch a lot of them. I always look through the description too and I am curious, since you list all your filming gear, have you ever made a video explaining what you're using, how and why? I've never made a video. Not even a tiktok. But I'd love to have a better understanding of what is needed and why in case I ever do want to dip my toes into the video tutorial world. Any tips for learning?

Birch Benders can you please Test Kitchen this? It's just a mug muffin but they are good so it must be monk fruit alulose or something. The chocolate chip cookie one is pretty amazing with a little butter afterwards and I use half cream half water. 1 minute and ready to go. If I could upload photos I would. I'll look for somewhere to do it

I ordered sodium citrate right after watching this... with a lovely "get it tomorrow" it's bad I know but it's so cool when it happens... minutes after it delivered this afternoon I was making this magical potion... My life has just been altered by this! :) and my mac and cheese loving kid will get a homemade sauce from now on! He doesn't like when the cheese sauce hardens.

Hey Wes! Thanks for doing this. I saw a while back that you could do this with sodium citrate, but I didn’t have the courage to try. LOL Thanks for taking the risk for me. Question: I don’t know if you know the answer to this (and I posted on the KetoFocus video in case she might see it, too), but I am wondering why, in her recipe, she recommends one not use Calphalon pans. The bigger question for me is whether or not other nonstick surface (like Green Pans) might react with the sodium citrate and wreck the recipe.
