Low Carb Keto Queso Recipe:
8 oz freshly grated sharp cheddar cheese
1 cup heavy cream
2 T butter
1/3-1/2 cup diced Vidalia onion
1 T minced garlic
4 oz can fire roasted diced green chilis
1/3 cup fire roasted diced tomatoes
1 t xanthan gum
1/4 t ground cumin
1/4 t dark chili powder
1/8 t smoked paprika
1/4 teaspoon salt
1/4 t black pepper
Melt butter in a saucepan over medium heat and then add in the onion and cook it down until translucent (about 5 minutes).
Then, add the garlic and fry for about 30 seconds, then add the tomatoes and green chilis and cook & stir until well-combined.
Add the Xanthan gum over all the ingredients and stir and cook until there's no lumps.
Add in the cumin, chili powder, smoked paprika, salt, and pepper.
Add heavy cream into the pan while whisking. and stir until it's combined, thickened a little, and changes color.
Turn the heat down to low and add the shredded chees and stir well until the cheese is melted and completely combined. Make sure you taste it for seasoning, add anything you would like to it. (Like bacon, cooked ground beef, etc.) If it's too thick, add more cream. Enjoy!
