[RECIPE IN THIS DESCRIPTION] Lupin Coffee Cake.

This cake is a nice little treat that is easy to make! The topping adds this lovely caramelised, crunchy top and it all pairs beautifully with some cream!

CAKE INGREDIENTS:
- 4 Large Eggs, separated
- 1/2 tsp Cream Of Tartar
- 1/4 cup (60g) Butter, melted
- 1/4 cup Sweetener (I used Erythritol)
- 1/4 cup (32g) Coconut Flour
- 1/2 cup (50g) Lupin Flour - (I used Miracle Flour - wholesomeprovisions.com/colle...)
- 1 tsp Vanilla Extract
- 1 tsp Apple Cider Vinegar
- 2 tbsp Almond Milk, unsweetened
- 1/4 tsp Baking Soda / Bicarbonate Of Soda
TOPPING INGREDIENTS:
- 1/4 cup Sweetener, preferably a brown sugar replacement (I used Sukrin Gold)
- 2 tbsp Butter, melted
- 1 tsp Cinnamon, ground
METHOD:
1. Preheat oven to 180c/350f. Prepare a medium-sized cake tin by greasing it.
2. In a large bowl, add the egg whites and cream of tartar. Whisk into stiff peaks and set aside.
3. In another large bowl, add butter, almond milk, vanilla extract and egg yolks. Beat until well combined. Then add the coconut flour, lupin flour, sweetener, baking soda and apple cider vinegar, mix well.
4. Slowly fold in some of the egg whites, continue until all of the egg whites are incorporated.
5. Carefully place the batter in your prepared cake tin, spreading it evenly.
6. In a small bow, add ALL topping ingredients and mix to combine. Then, gently spread the topping on your cake batter, using a toothpick to swirl into the batter slightly.
7. Bake for 25-30 minutes, or until a toothpick inserted in the middle comes out “clean”.
8. Leave to cool before cutting into 8 and enjoying!
