[RECIPE IN THIS DESCRIPTION] Lupin Whey Bread.
Miracle Flour was provided to The Keto Kitchen free of charge by Wholesome Provisions
This bread reminded me of American cornbread - it’s got an almost cake texture to it (whilst still being sponge-y) with a blend of savoury and ever so slight sweetness - I hope there’s someone brave enough to add some corn flavouring to really make it like a cornbread! If there was more sweetener added it would be closer to a pound cake but it’s still delicious as a slightly sweet bread. DO NOT OMIT SWEETENER AS IT HELPS WITH POTENTIAL LUPIN FLOUR BITTERNESS.

INGREDIENTS:
340g (12oz) Cream Cheese, soft
56g (1/4 cup) Unsalted Butter
4 Eggs
60ml (1/4 cup) Cream
60ml (1/4 cup) Oil (Olive, Avocado or Coconut)
72g (1 cup) Unflavoured Whey Protein Powder (I used MyProtein)
50g (1/2 cup) Lupin Flour (I used Miracle Flour - wholesomeprovi...)
2 tbsp Sweetener (I used Erythritol)
1 tbsp Baking Powder
1/2 tsp Xanthan Gum
METHOD:
1.Preheat oven to 170c/325f. Prepare a large bread tin.
2. In a large microwavable safe bowl, add the cream cheese and butter. Microwave, on high, for 1 minute. Then mix well.
3. Add eggs, cream and oil. Mix well.
4. In a medium bowl, add whey protein, lupin flour, sweetener, baking powder and xanthan gum. Mix until well combined.
5. Add the dry ingredients to the wet ingredients and fold with a spatula until combined. Leave to sit for 5 minutes.
6. Pour into your prepared bread tin and bake for 30-35 minutes, or until the top is browning and a toothpick inserted into the middle of the bread comes out “clean”. Leave to cool, then cut into 16 slices and enjoy!

Just made this thank you. Absolutely gorgeous with homemade keto lemon curd , however I would say more like cake bread but still delicious. More lupin recipes please. :)

This bread turned out to be delicious with a very small amount of corn flavoring! I'm so happy to have this EASY keto corn bread substitute. I put butter on it straight from the oven and it was amazing. Guess it's obvious this Southern American is happy!

@@TheKetoKitchen About 3 drops I think. And I forgot to mention I put a couple Tbs of lupin semolina in to give it a cornmeal texture, but I don't know if it helped.

I wonder if adding a little baking soda would help with the taste of the lupin as it can with vital wheat gluten. Might try it. I wish you'd torn the bread as well as squeezed it. Squeezing it just makes me think it's rubbery like so many other keto breads. I actually like the taste of the lupin flour in crackers, but not in bread.

I would think so! I tried grilling it and the edges went crispy like breadcrumbs - thought the middle remained quite the same, so I think dehydrating/drying it would be a better option
