Pete, I have never seen more happy cows in my life! They were skipping and running and chowing down on the most lavish green grass pasture ever. You take such awesome care of your animals! Thanks for the info on cooking the steaks. They made my mouth water! ha I love your channel!

I love seeing you call your cows up from the pasture Pete. Reminds me of my late dad. He loved his cows like I see you do and he would call them and they would come running and get their back scratches. Thanks for filming for us👍🙂

I have watched almost all of your videos. Mostly because you're kinda living my dream, but also because I learn a lot! But the thing that impresses me the most is how great you two work together (unless you edit out the yelling and stuff)! It's a beautiful thing to watch. Heck, she even laughs at your jokes! (you really do need to do a "joke special" video one of these days)

Wow your cows are spoiled with that amazing grass! My husband’s family has 20 acres in eastern Washington where it is very, very dry. The few cows that are raised there every year would be in heaven with just a smidge of your pasture!

I've always tried to bring steaks up to room temperature before grilling. The Bearded Butchers just did a video on the differences between grass fed beef versus grain fed beef, might be fun for your viewers that are beef fans.

We're getting our first calves in the next couple of weeks, along with pigs, some more turkeys, and the good Lord only knows what else 🤷🏼‍♀️🤦🏼‍♀️🤣 I'm so excited! We moved to our farm a little over 2 months ago and we're finally settled enough to start the good stuff!

I’m sitting here drooling watching you cook those steaks. The finished product looks great! If I was your neighbor whenever I smelled that grill get fired up I would find a excuse to stop over. No chance of that though I’m over here in New Hampshire.

Pete, a while back when you were making a video about pigs I sent you a link to Victorian Farm about housing pigs, and you said you had seen it. Recently came across two series from my youth and my 20s Old Country and Out Of Town both are the same gentleman Jack Hargreaves talking about the country and farming from the 40s, and 50s to back before WWII. He had become a TV executive but had a real love and knowledge of the country. He just talked off the top of his head and never used a script. Think you might like these, and there are loads of episodes on RU-vid.

Nothing like seeing a poultry paddock empty after the season winds down. The guys said "Nice try, Pete!" on the cows pointing out the lost posts and spools, Haha, they've really been looking forward to seeing this vid while we were out. Me, too. I drive from Michigan to California every week we started buying up supplies from auctions three years ago and plan an early retirement farming. We have a few cows and pigs and hire the neighbors boy to watch them when we are gone. Not ideal but we put our own meat on the table when we are home and have enough to sell to family and neighbors to support our farming habit (for now anyway.)

Our cows would gather in a fence corner, usually about 1AM, and the dominant ones would push the "lesser" ones through the electric fence. The bellowing about being shocked would usually wake us up so they didn't get far, but it was interesting just how clever they can be. Usually by summer's end though, the "lesser" cows had learned to stay away from the corners.

Dexter cattle are like big pets. I've been fencing in some land of ours for more pasture. Problem is high tensil wire is hard to find at the moment I've got enough for two strands but I'm running a total of 5 with barbwire up top for the deer. I forgot and left a gate open and I turn and look and my 7 year old was feeding two heifers candy peanuts in the back yard they followed him around like a dog. I couldn't get mad it was me that left the gate open!

Excellent advice on how to cook a steak. Thank you. One little thing. On the reverse sear method, I sear the steaks over the charcoal starter when the coals are at the hottest. Takes only 20 seconds per side. Makes a fantastic crust.

The way of cooking you mentioned is indeed called " sous-vide " , French for " under vacuum ". It is a method often used by high-end restaurants in Europe ( and Belgium ). They cook at approx. 65°C , between six and eight hours, depending on the thickness of the piece of meat. So, in fact, you are a " chef performing haute-cuisine" !!

Always bitter sweet when you are putting things away for the season. Here in south Georgia we don't get that cold so we don't have as much to do for winter. I do miss the spring and fall in the north but not the snow. That steak sure looks good. I am sure it has much more flavor than the supermarket beef. We like the Montreal Steak seasoning here too. I also use it on burgers. Makes a burger that is way tastier than fast food burgers. Your videos remind me of when I was growing up on our small farm.

Amazing video as always!! Can't believe you can put out so much content as a busy farmer! And, as a butcher who has cut very nice and very not so nice grass fed beef, your cuts are incredible for grass fed. The marbling on the steer cuts I've seen is great, and even these heifer cuts look nice too! Less marbling doesn't always mean less tenderness, there is microscopic fat cells that bind to the muscle fibers that we can't see that aid hugely in tenderness, and we just use visual marbling as a grading scale! It isn't the be all end all of tenderness and flavor!

Love your regular videos. I can understand the content and appreciate your approach to farming & Business. At age 64 (nearing retirement, thank the stars), I am both a ~part-time~ specifying BSEE PE in commercial construction and a family farm owner. I find your presentations to be clear, lucid, and sensible (Kinda like a set of specs and drawings, huh?). Keep them coming! Buffalo?..., now that would have been a huge change order...😄.
