I may need to take up an offering to buy all the meat that can go on a wsm with a 10 inch stacker. lol We shall see. I know, I can go to my old workplace and take up an offering, then go buy up a bunch of meat and go cook for them. Wonder if anyone's ever done that. lol

Damn I need me one of these!! Been trying to figure out a way to smoke more than 6 racks of ribs on mine and this would definitely help me out, could squeeze another 3 racks on my smoker with this. One problem though; I have the Cajun Bandit hinge kit so my lid is permanently attached to the middle section so I'd have to take my hinge kit off and fill the screw holes to use this ring. As bad as I'd want some more smoking surface, I sure love having the lid hinge so I don't have to constantly take the lid off and set it down.

I have a couple Buck pocket knives and love them. Just got out of the habit of keeping it on me. Kinda like a wrist watch. Since my phone has the time. There's usually a knife close by e.g. my shop, the outside nuilding, the kitchen, or my office desk. Besides, Janet gave them to me and I fear losing them. I will have to unpackage something with one so you can smile and say there you go. lol

Hey, CB talking about CB. lol Yes I've been eyeing this accessory for a couple years now ever since I saw HMB using one. Good timing all around. Got a lot running thru my head as to what to cook. It will take a lot of meat to pack that full sittin on top of the wsm. May need a loan, or better yet, load me up with some NJ meat. lol. See ya oh, I did a cleansing when I opened the box. I cut the tape, then opened the cardboard flaps and let all the particles float out before toughing anything. Must've worked cause I'm still good. cough cough !!

A pile of wings. 3 racks of ribs each level on that many grates. 3 9 lb butts per grate. Then hanging all kinds of meat and jerky. We shall see. Maybe I can think of something. LOL Thanks Craig.

Want so bad!. Purchased the SS WSM door during the last 10% off sale and I absolutely love it. The protective film was sort of a PITA to remove from the door, wear gloves to protect your hands from a possible cut. I already have a mod planned for the door. The next 10% sale will probably have me buying this cylinder but first I need to put up a 12X8 canopy on the patio and build a work table to hold my accessories for my Weber grills. BTW do you have Laura's number? LOL Looking forward to your first cook with the extension cylinder. My vote is for ribs.

Phil, I just bought a 22 WSM and a rib hanger. I really would like to hang ribs in it but the smoker doesn’t appear to have enough depth . I’m thinking the stacker will solve this problem. Or do you have another recommendation? By the way, your videos have great content.

Hey Phil, question for you. I smoked a pork butt over the weekend on my WSM and wrapped same at the end for about two hours in foil to get over the stall. Once I took off the smoker I let it rest for about two hours. The meat was great however I lost alot of the "bark". Do you have any recommendations for future reference? Thanks, Mitch
@progers5019
@progers5019 4 года назад
Hey Mitch. Two things. While In two layers of tight foil, it is in a steam bath which deteriorates bark or turns it soft. If using foil for wrapping, after the butt internal reaches the 200-204 F mark, remove the foil and allow the bark to firm back up. That's one reason I usually use pink butcher paper. It seems to be able to breathe and leave bette bark results. Still may need to open up and firm up at end of cook. Then rewrap in same paper and let rest in paper and in empty cooler for 1 or 2 hours. I've had good results doing this. Hope that helps and Good luck.
