・Mix lightly after adding cornstarch.
・Do not over mix.
・Warm the cream and milk to 60°C (140°F).
・The temperature of the water for hot water baking is 50°C (122°F)

〚Ingredients〛
Pound mold 18cm-21cm
・Unsalted butter (for coating the molds)
*Caramel*
・50 g Granulated sugar
・15 g Water
・15 g Hot water
*Pudding liquid*
・100 g Cream cheese
・50g Granulated sugar
・40g Condensed milk
・8g Cornstarch
・2 Whole eggs + 1 Egg yolk
・240g Milk
・100 g Whipping cream
・1 cm Vanilla bean
(Vanilla oil can be substituted)
・4 g Gelatin
・14 g Water
Bake at 140°C(284°F) for 55 minutes.
(Pour hot water at 50°C (122°F)and bake in hot water)
