Hey guys! I’ve had a lot of requests for this dish - Japanese OMURICE or omelet served over flavored chicken rice!
This can be quite a hard one to master but the basics of the dish are very simple! Try it at home!

Ingredients (serves 3):
Flavored Chicken Rice :
- 100g chicken tender (or breast/thigh)
- ½ diced onion
- ¼ diced carrot
- 1 diced shiitake mushroom (or other mushroom)
- 160g cooked rice
- 2 tbsp ketchup
- salt/pepper to taste
Omelet:
- 3 Large Eggs
- 1tbsp water (you can replace with milk/soy milk)
- pinch of salt
For Sauce
- 1 tbsp of water
- 1 tbsp ketchup
- 1 tbsp worcestershire sauce
- 10g butter
How to Make:
- Start by preparing your flavored chicken rice. Cut up 100g of chicken tenders (breast or thigh is fine too) into small chunks. If you use tenders you can remove the white sinew part by holding down the chicken with a knife or fork and pulling it out.
- Dice ½ an onion, ¼ carrot and 1 shiitake mushroom into small pieces
- Add olive oil to a frying pan and heat to a medium heat - cook your chicken for a few seconds when the pan is heated and then add the vegetables
- Add 160g of rice and 2 tbsp of ketchup and give it a good stir. Cook for a few minutes until everything is cooked through and then add salt (and pepper) to taste
- Now if you want a nice round shape for your omurice - transfer your rice to a small bowl, press down on the top with a spatula and then transfer onto your final plate by placing the bowl upside down
- For the omurice sauce add 1 tbsp of water to a frying pan over a low heat then add 1 tbsp of ketchup and worcestershire sauce and turn up the heat while mixing
- Add the butter and keep mixing until all the butter is melted and the sauce has turned nice and silky - transfer to a small bowl for later
- In a mixing bowl, crack 3 large eggs, add 1 tbsp of water (milk/soy milk is okay but it may give you a milder taste) and a pinch of salt
- Give your mixture a whisk but make sure not to lift the whisk from the mixture - this will prevent air from entering into the omelet mix
- Now in a small frying pan (20cm) add olive oil and heat to a medium-high, to check if the pan is hot enough - dip chopsticks into the mixture and try cooking a small amount
- Once the pan is heated, add your egg mixture and keep stirring with chopsticks from the outside of the pan inward
- Once you start to see the middle of the omelet begin to cook and the outsides begin to set, take the pan off the heat and start folding the omelet away from you into the middle, use your chopsticks to adjust the shape if necessary
- Wait for a few seconds and then flip the omelet once, let it cook for a few more seconds so the underside can cook and your omelet is done!
- Place over your chicken rice and cut open - your omelet should fold out over the rice and be nice and fluffy while still being a tiny bit runny - pour your sauce over and enjoy!

How do you feel about using something like Sriracha instead of the sauce? I've always preferred hot sauce instead of ketchup on eggs. And most hot sauces are very low in or 0 calories!

This is personally one of the most approachable omurice recipes I've seen! I really like how the egg broke a little bit in the pan, cuz it shows that you can still get a good egg even with some 'mistakes'

I really appreciate that the outro is you washing the dishes. When living alone, the loneliness and emptiness hit my mind the hardest when I am washing all the dishes after finishing a meal I prepared for myself. Your cheerful and warm videos make the dishwashing part also heartwarming, and I can convince myself that it's okay to try to make a good meal all for myself.

Oh my god. Oh. My. God. THIS. THIS IS IT. THIS IS WHY I STRUGGLE TO FEED MYSELF! I never could describe why I just skip meals. But this is it. When I am with family I eat plenty. Even at work (I work alone 90% of the time) I will typically not eat all day. And this just helped me realize why. I think this is going to be very helpful for me going forward.

One of the things I like about Champ's videos is his recipes don't use crazy over the top ingredients, so they're easy to make. I'd been looking for a good omurice recipe for years, but google searches always lead to stuff that's way too fancy.

Did omurice attempts several times a few years ago. Main issue was not having a small diamete pan for the omelet, so always ended up with some browning. But the first time I did it, I managed to flip the full thing perfectly (unfolded).......never been able to do it since though :P

I’ve cooked a few French omelettes before, I’ve flipped the egg so many times it’s not even funny lmao. The tap on the pan is paramount to a good shape, without kicking up the underside properly it’ll just fall apart. It’s also super important to constantly stir the egg, you want extremely small curds to form, Ryosuke did a wonderful job at making sure it took shape properly so props to him.

Well if you ever question "do my videos actually help others eat healthy?" I litterally put down a bag of doritos and went and made a salad at the end of the video. Great as always! Omurice is one dish I've made quite a bit actually, isn't it generally considered a western food in Japan? Interesting to see western influenced Japanese dishes rather than the other way around. Next I'd love to see something with seafood! Takoyaki?

Omurice is a “Yoshoku” dish which can be considered a category of Western-inspired dishes that were popularized in Japan back in the 19th century during the Meiji Restoration. Because they were imported way back, the dishes have gradually transformed to fit the Japanese cuisine; it’s not apparent in Omurice but a better example would be Japanese curry tasting completely from the it’s origin in India.

I’ve been making chahan with koshihikari rice at home. Tricky to get the rice done but not too wet for frying. But I think I’ve solved it now. Last 2 times have been delicious and not clumpy 😊

I like the trick of putting your scrambled eggs through a siv before cooking. Will be using that for other recipes as well.

I want to try omurice after seeing it in a Korean drama. I grew up in Japan in the '50's and I never heard of this (and don't remember eating fried rice, only steamed white rice). I think I can follow your instructions. Thank you for the recipe.

when dicing an onion that way you can cut diagonally instead of horizontally on the first cuts! like folliwing the curve of the onion's layers, you'll end up with more even dices faster and more easily!

Omurice is a Yoshoku dish (Western influenced Japanese food). This style of cooking often uses ingredients such as "Western" ingredients such tomato ketchup.

This was my favourite dish while in Japan, one I'd take anywhere we went if they had the option, with my first experience being in the Final Fantasy 14 cafe in Osaka. Trying it at home, I never seemed to get the runny yolk in a way that I enjoyed it like I did out there, so I tend to lean to browning it a little more, and the ketchup part always throws me off a little, I think the local ketchup has a bit too much sugar, but trying this with the worcestershire mix really did make a difference. I've just recently discovered your videos, and I do like your technique Sir! Your video on making Okonomiyaki has me hooked on the dish, I love it. But to answer your question: Yes, I can flip an omelet quite easily. Your omelet here is very similar to a French butter omelet, just minus all the butter. Arigato for creating your channel.
