I make a variation of this with smoked jowl bacon, a ton of leeks and the sharpest, oldest cheddar I can get my hands on. I eat quiche constantly, it's the king of pies.

In my family, we make one version with broccoli and corn and another with spinach and mushrooms, sometimes Shari with shrimp. Both versions have cheddar and Swiss. Ours tend to be more filling, less custard, but I love them all. I love a properly baked crust. Adds so much to the finished product. 🥰

Thank you for sharing. Love the fact that the quiche is done just right. I too have made my quiches that way and not with the top overly browned like they serve it in many restaurants and bistros, even in France.

Because that’s the traditional way to have it 😊, dark browned and NO cheese. This quiche looks delicious but that’s not a quiche Lorraine. Old recipe are set in stones and often really basic and probably boring to show. To each their own. But it’s like making a carbonara and use cream. 😅😅 nothing wrong in it, taste lovely but that’s not a carbonara.

Awesome recipe, well done! Just one insignificant comment…salt is salt..koshering salt is not less “salty” than table salt because all salt is Sodium Chloride. The difference in koshering salt is that it doesn’t pack as tightly as table salt so if you’re measuring out by volume (and not weight), you will use a significant more amount of table salt than you will koshering salt.

You don't have to put the pie in the fridge more than once. Mix the dough, break of chunks then pat it shape use a measuring cup to get get the corner right then put it in the freezer, turn on the oven, and make the filling. By the time the filling is done you back your pie crust. Something's like quiche or pie dough can bee ade a head. Like if your making Sunday brunch for friends you can make a quiche the day before. It also freezes well if slice them and wrap them in wax paper and foil. Then just defrost a slice or two in the refrigerator overnight and warm in the oven or eat cold.

This looks delish! I'm not typically a huge thick cut bacon fan, but I will definitely crisp up some Pancetta or bake my own thinly sliced bacon. Love Gruyere cheese! I'll definitely give this one a try!

For anyone reading this... try it with (pre cooked leeks) grn onions, cooked sausage, spinach, and ricotta... and definitely some cheese on top as well as covering the bottom. I like to sneak in a bit of cayenne - no one actually notices it. If using mushroom pre cook them very well or else your quiche will be watery and not set. As for the pastry, I always go savoury (same as when I do a chicken pot pie) and add onion/garlic powder, black pepper, salt and some herbs de Provence. (no sugar in the crust). Adding one egg white will prevent a soggy crust when adding liquid pie fillings. Don't be afraid to think outside the box. You can't screw this up.

I'm French. It's quite good. If your vegan (like a bad hunter) you can switch bacon with vegetable (leek, onion, ... dont use false meat/bacon, pig doesnt deserve it). After all i'm not an italian i don't complain and whinning each time my pasta are not cook like i want.

Well my version at work is quart heavy cream and egg with 5oz cheddar cheese and 3oz Lorain i thought Lorraine is cheese, and all the quiches get cheese either cheddar or 5 blend

I wonder what would be a good replacement instead of a plastic sheet, because you know ... mother earth. And while we are at it, how about not using aluminium for a freakin pie/lasagne but for example a reusable glass or ceramic pie/lasagne form. Just a week ago i saw the statistics on polution and the US on a per citizen break down is just the worst, you waste ressources like there is no tommorrow and well due to that waste there just may be none.

Would be nice to stop misleading your audience...not only you, but also the hundreds of other video posters pretending to show European cuisine (mostly French & Italian) recipes. In this case call it Queens pie and you won't get my attention, but quiche lorraine, seriously ? Have someone offer you a classic reliable book (not Jamie Oliver) : no cheese in quiche Lorraine, your bacon bits are huge (actually inedible), your pastry is thick and horrendous, and you forgot the cream which resulted into that stuffy very firm filling...what a sad prank ! Hope your cookies, brownies and other donut are better than that...
