These videos are an amazing resource for people that are struggling. My only issue is that I'd like to see a cookbook to include and organize the ideas. But, that's just me.

As I a live alone seinor, I usually make at least 3 different casseroles a week. One casserole last a few meals, Its cheap and easy to make.

There are probably thousands of cook books with recipes like this. Alot of these budget meals are based on Great Depression and post WWll era where money was tight and food options were limited and it's been a popular trend for years on YT for creators to try them out and some have even compiled the best ones into cook books. Just search and you'll find them in a few seconds.

This was a staple growing up in Scotland too. Someone gave my mum a similar recipe and we had it all the time. Add two or three heaped tbsps of Korma powder or whatever proprietary 'Indian curry' spice mix is available and a tbsp of mango chutney before cooking. It's light years away from authenticity but is undeniably delicious.

In Finland, various casseroles are a stable of home cooking. Especially the humble and cheap macaroni casserole that has been loved by children and parents alike for generations. Simple and hearty home cooking on a budget. Also common as school lunches due to being cheap and easy to make in bulk

Whenever I watch your meals on a budget episodes, I always think back to the glory days of public access television where fun shows like “Cookin’ Cheap” with Laban Johnson and Larry Bly made my day.

Yeah, 70's and 80's PBS was very educational, then the 90's happened and still continues. Mr Roger's Neighborhood is demonized, there's no School House Rocks to teach kids about this country's origin and government...it just woke pandering now, starting with Political Correctness in the early 90's.

If you wanted to add frozen veggies you could add them right when you pull it out of the oven. They warm up fast and will also cool the casserole down so you wont have to wait as long to dig in!

Try this: My dad used to make it when I was a kid. Cook up frozen french fries with onions and w/e else you want, then add scrambled eggs. Cook it up. Cheap, has tons of protein with carbs and it's actually really delicious. So good and simple.

If you are struggling save the money you would spend for the canned soup and make a bechamel(white sauce) add some diced onion and celery, seasonings that you like season generously because you are seasoning the whole dish! Oh yes leave out the other sodium bomb(soup mix). You would add your chicken and rice and water cover and cook as directed. Amount of water would depend on the amount of rice you use, the chicken juices will add to the liquid so for a cup of rice I would only add I cup of water. I’m going to make it my way and see if it’s cheaper. I will post the results within the next week. I love this channel!♥️♥️♥️♥️♥️♥️

Nice job. It's a great casserole. Campbell's soup website had this recipe on their website years ago. The recipe called for cream of chicken soup with sliced celery and chicken breasts. The appearance of the dish was a lot better than using beige color cream of mushroom soup. Keep the great vids coming!

My mom would make this dish starting by browning the skin-on-bone-in-chicken in an oven safe frying pan, then add the a can of cream of chicken soup, fill the can with minute rice, then fill the can with water (maybe add some milk), put a lid on it, put it into the oven for about 20-30 minutes and it feed a family of 5. Delish ! Mom always added a lot of pepper and rubbed sage to her chicken dishes. Served it with some steamed broccoli.

Had this growing up as a kid once a week! Loved it, make it at home every couple weeks now for my wife and kids in to colder months and they all love it. I use 1 can cream of broccoli and 1 can cream of cheddar soup and bread crumbs on top, last 20 mins of cooking I remove the foil and let the top crisp up. 😋

Love to see these home made recipes. You can control evey aspect from cost, ingredients to taste preferences etc. and design it the way you the people like it. .Takes the same amount of time, labor , thoughtfulness as rotating, flipping, grilling , air frying , adding seasoning, butter, hot sauce etc. etc. to frozen "convenience " food. Healthier, better for the soul and can be frozen for later serving too!

My sister gave me this very recipe several years ago and l make it a couple times a year. And l do add a bag of frozen mixed veggies most times. Very easy and very tasty! I should have added, use one breast or thigh for each person at dinner. Or if l take it for a potluck then l cook more chicken and shred it so everyone gets some meat. Always a hit.

Good idea. If you’re on a very tight budget & can’t afford chicken breasts / thighs, the cans of white meat chicken breast are in dollar tree for $1.24. Add sliced potato to the top of the casserole when baking to make a hotpot.

You can definitely use instant rice, I do! The cooking time isn't as long, about an hour, and I use bone in breasts; when the chickens done, its done, and not at all mushy! Just be sure to use the correct amount of liquid. I typically mix 1 soup can of milk in with my soup, then I pour the remaining liquid(according to how much rice you use, subtracting 1cup for the milk) on top. I layer a buttered dish, instant rice, soup mixture(add 1can milk + 1/2 stick melter butter), chkn, remaining liquid according to amt of rice, and foil. 350-400, its DELICIOUS.

I would chop up some green and red bell peppers and maybe add a can of chopped green chilies to the soup mixture before the chicken was put in. The red bell peppers would add color and make it look less boring. It would work. When I'm finally into my own place (hopefully soon), l will try this.

I first made this recipe in the 70's. I use brown rice, it's more nutritious & it taste really good. I have several variations. It's easy, delicious, nutritious, & budget friendly. It helps to warm your innards when it's cold outside too!

I make a version of that, and have for years... but I use the instant rice, and a rotisserie chicken that I pick the meat off off. And if I'm feeling "extra", I melt half a cup each of mozzarella and Cheddar cheese on top. Only takes about 30 minutes, and its delicious!

I made a similar chicken & rice casserole in my young adulthood. In fact, it was so good that my sister-in-law always requested a huge casserole every time she was pregnant. There were a few small differences, though. No onion soup mix... Two cans of 'cream of' soup, with 1 can of water & 1 can of white wine. The 'cream of' soup was dictated by what I had on hand or what the s-i-l was craving. Same for the seasonings. Sometimes we used a whole cut up chicken, sometimes all chicken breasts. It always turned out great & fed a lot of people. Thanks for the blast from the past!

I add cream soup with onion soup all the time when i cook in the crockpot, I use it 1 to 1 and I don't find it to salty (I don't like my food too salty) so I imagine this 2 to 1 is perfect. So delicious 😋!

Larry, this is a sign. I remember when you first uploaded this recipe a few years back and I immediately bought the ingredients and made this. It was delicious. thank you for using plenty of chicken..ive heard a lot of people lately say they are "stretching their protein". the problem is you cant trick your body into thinking its getting enough of one macronutrient by fluffing meals up with other macros (carbs and starches). eventually you will have sub-clinical health consequences or worse

Very nice, I will have to try this after my trip to the mountains this coming weekend. I just finished making a huge pot of chicken noodle soup with a Costco chicken, some noodles I got at Aldi for &1.99, 5 potatoes and some carrots that's going to feed 6 families tonight. All for less than $10.00 I'm just waiting on everyone to show up with their containers.

They say that Cream of Tomato Soup was the basis for the famous Chicken Tikka Masala sauce when someone complained their Tikka Chicken dish had no sauce and sent it back, and the chef whipped up something with said tin of soup, some spices and hey presto, a new dish was born and became a british staple... :P

Will make, adding herbs to the liquid to help flavor the rice and chicken, sprinkle paprika across the top. OR make as is, and plate the rice, a spoon of buttered mixed veggies on top, then the chicken chicken.

I saw this and now half a recipe is in the oven. Broccoli cheese soup and some fresh broccoli. Chopped celery and celery salt.A packet of ramen noodle chicken spice. Three breast strips. I might too with ground chicken stuffing bread crumbs n cheese when it's about ready.

I really like this kind of easy meal. I like to use bone-in pork chops. Cook in crockpot. Add in a frozen veggie blend the last 15-20 minutes. Done. Meal is prepared. Not a fancy meal for a dinner party. But so good and you get veggies in your meal. Lipton Onion Soup Mix is better than Ranch Style Seasoning for this IMO. Nice work.

I use minute rice and it isn't mushy. I also brown my chicken first. Also I add thyme and onions. I do not add onion soup mix.

My mom did this exact recipe. Except…… She sprinkled the onion soup mix directly on top of the chicken pieces before baking. She told us first time making it she thought I wouldn’t like it. WRONG. It became one of my favorites.

I would either add some paprika for color or right when it comes out of oven add shredded cheese put back in for 15 minutes just to melt the cheese. That would add delicious flavor plus color. Not to expensive either.

It's a variation of the chicken & rice casserole I grew up eating... I grew up watching my Mom and Dad cook meals for us kids, but never knew I could cook until I moved away from home... I just did the same things I saw my parents do, and I already knew what seasonings and flavors tasted good together. I use cookbooks ONLY for suggestions, and I don't mind saying I prefer my own cooking to most restaurant food any day of the week...! God bless ALL of us! WWG1WGA

The only place food needs to taste AND look good is a fancy restaurant. Everywhere else, only the taste matters. We do not have condensed soup in my country (well, I have never seen them) but I know some Dutch soups that could substitute this "cream of {protein}" soup. Might try this out soon.

Some of the Cream of soups are available unsalted, the name of the soup has blue letters, and shows unsalted on the front label of the can . You might not need any extra salt. You can always add some to your individual serving. A garnish of fresh parsley and some pimento peppers make the rice casserole more attractive, IMO.

My daughter makes this with cream of chicken, cream of celery and chicken, 2 cream of mushroom, inexpensive steak.. I've hunted my whole life, and a life member of club, we made the beef one with venison tenderloin, the chicken with pheasant or rabbit, same idea, it's great, I still make sometimes, my youngest daughter hunted with me and stayed at club weekends with me, she still makes but chicken or beef, unless I get game donated, a humble, inexpensive dish, especially if game donated lol. Her family loves it. My grandkids don't even know when it's game lol, appreciate what you do for the people! Keep it up bro, sry but this dish I knew and memories, tyvm tc 🥘🍔🥩

I rarely add salt to anything it's my personal choice and I think about blood pressure as I am 50+. I like the non salt taste, I get my salt from bacon and other processed foods

This reminds me of a casserole I used to make. My family called it "glop" because it ISN'T pretty (and for the sound it made hitting the plate…). Didn't stop them from complementing me on the taste, however.

Some of the tastiest dishes I've ever put in my mouth looked like a car-accident on the plate. Yeah, I'd definitely add some cheese at the end and give it a few minutes under the broiler (Brits call it a "grill") to get all melty and brown. And then you'd REALLY have a meal fit for a wizard! Enough to feed ALL of YOU, THE PEOPLE on the cheap!
