This is a dish I love to make for large groups of people because it's super easy to make, very filling, & PACKED with flavor! I'll call it Firecracker Salmon on Sweet & Sticky Rice with Lemon Zest Veggies.

INGREDIENTS FOR SALMON:
Fresh Salmon
Green Onion
Lemon
Teriyaki Sauce (Get a thick one)
Sriracha Sauce
Salt & Pepper
Avocado Oil
INGREDIENTS FOR RICE:
Sushi Rice
Rice Vinegar
Sugar
Salt
INGREDIENTS FOR VEGGIES:
Broccoli
Snow Peas
Red & Yellow Bell Pepper
Carrots
Pickled Baby Corn
Lemon
Salt & Pepper
Fresh Ginger
Garlic
Avocado Oil
Soy Sauce
INSTRUCTIONS:
RICE: Wash rice throughly, add water & bring to a boil. As soon as it boils turn burner to low and cover with lid for 20 minutes. After 20 minutes take off heat and let sit for 5-10 minutes.
Add a quarter cup of rice vinegar to a sauté pan and add 3 tablespoons of sugar & 1 teaspoon of salt. Bring to a quick boil, stir until sugar & salt are dissolved, let cool for 60 seconds then add to finished rice.
SALMON: Preheat oven to 350°, cover salmon in avocado oil & add generous amount of salt and pepper. Bake for 13 minutes.
Add a quarter cup of teriyaki sauce to a bowl, add a tablespoon of Sriracha sauce (skip if you don't like spice), add a teaspoon of lemon juice, and a sprinkle of salt & pepper. Mix and coat salmon as soon as it comes out of the oven. Top with green onion.
VEGGIES: Add avocado oil to a sauté pan on medium heat, add broccoli 1-2 minutes, add snow peas and steam for 2 minutes, add peppers, shaved carrots, shaved ginger, soy sauce, lemon juice, & steam for 2 minutes. Remove lid and sauté until soft.
Plate & Enjoy!!!!
