Make Vareniki, Ukrainian Potato & Onion Dumplings | Quarantine Cooking

On this Quarantine Cooking episode, Emily Fedner of @foodloversdiary and author of Dumpling Lover’s Diary, makes her babushka’s vareniki. Vareniki are Ukrainian dumplings stuffed with mashed potatoes and caramelized onions. Emily starts by making the vareniki dough by hand, before moving on to the filling. As the dough rests, she slowly cooks onions in butter until they are caramelized. She then assembles her vareniki, boils them, and serves them with sour cream, dill, and paprika smoked onions.

Depends on her proximity to a trained professional in the family. I loved my mom’s food, I loved my grandma’s, but I make their recipes better. My grandma born in North Carolina would kill me, but my mash, my cornbread and my fried chicken are much better than hers.

Hey I do understand what your saying but you've gotta understand me Her dogs wouldn't even eat her cooking I felt sorry for my opa (rest his soul) But man she could grow anything So we'd always eat straight from the garden And in the end she gave up and grew apples n pears n plums for us instead 🤷🏻‍♂️

My baba was a BUSY farm woman. No messing around with cutting fiddle-y circles. The dough was rolled out until it covered almost half the work table, and simply cut into squares. Folded in half around the filling to make triangles. And if she had more dough than filling, she’d fill the rest with raspberries fresh from the garden. These were boiled separately and served with sour cream and a sprinkle of sugar.

We had special kind of vareniki - with cherry. I can't say I liked them that much, for me that was somewhat weird combination, dough with cherry, boiled. But in my childhood my babushkas would make them often enough, so occasionally I'd eat them. Also, you could eat them cold, later, as some kind of a desert. If you think about it, our babushkas were children of WWII, so I believe they had to make do with what they had. If you had a fruit or a berry in your garden, some flour and some butter, you could make a desert of sorts, because there is no way of having something nicer, like chocolate, for example. Quite often russian/ukrainian/belorussian quisine is like that: not very fancy ingredients you could find growing in your garden, combined. And sometimes they'd make a vareniki with stewed cabbage (more slavic goodnes coming up!), but again those were not my favorite. I really, really liked the ones with mashed potato. Ah, the memories!

Love this...so many variations...try blueberry with the sour cream...ugh man so good My baba, on special occasions made what she called petahe, pronounced pit-toe-heh, where some of the mashed potato goes in the dough and they are fried....friggin heaven. ....miss you babchi...

Great job! My BABA was an angel. She was such a good cook and I miss her varenikis. My mom had the same recipe but she added farmers cheese to the potatoes. Delicious!

I lived in a Siberian town that was 1/3 Ukrainian. They didn't have the best jobs in town, let's say, an underclass. Their vareniki are an amazing, and the tvorog s jagodom variety fried in butter is my favorite, a little taste of heaven!

Looks great. I’ll have to try the smoked paprika. In my Ukrainian family, the one thing we did that was different was, after boiling we would then add more fried onions on top, alternating them in layers with the fried onion in between. Then in the oven they would go for about 15 minutes. The plate up was a little heavy on the sour cream also But we were Ukrainian not Russian.

Although we aren't Russian, but Ukrainian, potatoes, sometimes rice or noodles, a meat or sole on the weekends, tomatoes with dill were normal.

Man that looks great! I've never heard of Vareniki before. In eastern Europe are Vareniki universally dumpling/pierogi, or is there actually a difference between the two in an everyday home? Again looks great and thank you for this! Best wishes, Derek.

Nah, it's just the Ukrainian variant, but it's very similar to the Polish pierogi. It's a different name for a pretty similar dish, though every region has it's own unique twist on the dish :)

In northern Caucasus, there is a version of this made stuffed with caramelized onions, walnuts, cayenne and coriander seeds. Served with garlic butter and kefir as a side.

Мне одной стало плохо, когда она до конца не почистила картошку и не убрала глазки? Я знаю, что вряд ли после такой приготовленной картошки ничего не будет, но все же... В большинстве стран СНГ, в том числе России, их достают, поскольку это грязь и небольшое количество соланина. =(
