I lived in South Africa, for a short time, and fell in love with the people, the wine and the food. Biltong and droewors were what I missed the most when I left. And sweet Teresa in Ladybrand. I missed her a lot.

Loved your explanation of relative humidity - I made a very similar box as the one you described, but the inlet was in the bottom face, and I put a metal plate above the bulb that gets heated by the bulb to cause the column of air to rise evenly in the box. The metal plate also catches the drippings.

My son loves biltong so much (his step-grandfather was originally from what was then Rhodesia and has still family in South Africa, and he introduced us all to it) that we bought him a biltong machine from Biltongboks. He's tried beef, lamb and kangaroo. Kanga makes great biltong - the flavour profile is very intense. He sits down with my entire spice rack to try different combinations and see what he likes best. Great video.

I have recently come across a lot of South African's over here in East Yorkshire. Absolutely exceptional individuals. They all have Biltong Boxs, so I'm going to build myself one over the Christmas Break. I also noticed the flavour difference in each families biltong seasoning. I'd sooner chew on Biltong, then chew a chocolate bar. This recipe looks absolutely superb, but with a few more 🌶 s for me. Thank you for Sharing.

When I went to South Africa when I was young I had a Kudu stew in the bush. That was one of the best meals I’ve ever had. Kudu is a special meat.

That is a great video, comprehensive instructions, very easy to understand. I'm so going to get into this! This stuff is great, there is a good Butcher a few miles away from me ( in Bristol, UK), he's South African, but this stuff is fairly expensive so don't have it often ...but I love it! Oh man! I used to work with an older guy that was from S. Africa. He called himself Mr. Ed. The stories he told about his travels, mainly by boat, were so good. Even better was when he gave me a piece of this jerky that his relatives would send over from time to time. He made sure to let me know not to asks for more. Lol. It was honestly the best jerky I'd had.

I also made biltong and wors with vegetable casing while living in England.Your presentation was excellent and complete .Your recipe is almost keto friendly except for the Worcester sauce , being 10% of the wet ingredients it is still better than anything I have seen. Thank you for sharing your experience and knowledge...

Greetings from a fellow meat lover in South Africa. Your biltong recipe sounds about right. Try roasted coriander and a pinch of thyme. Biltong can be done in so many different ways: experiment!

You're not kidding! I've watched a dozen different videos showing how to make biltong, and everyone does it differently. I moved to the UK a long time ago from KZN and although biltong is readily available its expensive so I buy it rarely. Now I've made my own for the first time and its currently on day 3 of drying. I'll have about a kilo in the end and if it works well I'll never have to spend £40 a kilo for biltong again :D

I believe the first time i heard of this recipe was in a book titled "With the Royal Canadians" about the Royal Canadian Regiment's involvment in the 2nd Boer War. At the start of the book the write tells of an exchange between two privates and a veteran Corporal who had seen action at Batoche in the 1885 Rebellion. The privates were staring longingly at a hut being used by the natives to dry meat (likely Biltong) and the corporal pipes up saying that the "old sweats" like him could go for weeks on nothing but hard tack and salted meats and that the privates needed to toughen up. Once the privates went on their way the Corporal then snuck off in the direction of the hut to sneak in a feast on some dried meat. Maybe it was out of hunger or it could definitely be that the Corporal was a fan of this recipe back in 1899.

Hunters in East Africa also used to preserve meat somewhat this way. And dhow crews carried strips of beef cooked in oil and packed in oil, which preserved it. This would take care of their iron needs at sea.

As a first time biltong maker, I set up my plastic box by cutting a large rectangular hole in one side, and putting a dehumidifier there and sealing around it. A hole covered by gauze at the top allows airflow over the meat. I think the dehumidifier is the most effective fan type. I was going to attempt to use a heating bulb, but I couldn't find a halogen or incandescent bulb, everything is LED now days, so I left it. 68 hours of hanging and the meat is well on its way. The thinner pieces might be "wet" biltong by tomorrow evening. Looking forward to trying it!

Others have mentioned this- The coriander should be roasted in a pan before grinding it. It boosts the flavour and yes- the Brown unrefined sugar has a good effect too. Thanks great video- very clear and I love your little convection oven principle

I love eating biltong just made my first Biltong box, interesting recipes you make the Biltong slightly different from how my mum made it, might try it sometime thanks, yours looks Lekka. My box is a old kitchen cupboard no wired fan at moment.

Biltong is such a great snack! With regards to a fan, or even a heat source....you don't need it really if your humidity level is low enough. When I used to make it in South Africa we would just hang it in the open in the kitchen...maybe had an oscillating fan to keep flies away!

You can also fasten bird-wire (ogiesdraad) to the shelves in your biltongdryer, which is handy if you want to dry chillibites or dried fruit.

Thanks for the video, biltong is looking good. Personally i do not like using sugar or any sweet stuff, normally use our old family recipe, but when i get lazy i just buy Freddy Hirsch ready mix biltong spice, also try leaving meat on a cooling/ drying rack after you add the spice so most moisture drains overnight to the bottom of the pan, saves a day or 2 when drying

We always scorch the coriander in a pan before grinding it. More prominent flavor. We still my Great Grandmother's recipe. More than a hundred years old

Super lekker! For jerky lovers that haven't had the opportunity to taste South African or Namibian-style biltong, you are greatly missing out and then some. It's so much better for you (ZA and NA game) and no sugar injection (unlike jerky). I lived on the stuff for nearly a week (on credit from a lovely Afrikaans shopkeeper), while there was a problem with international volunteer teacher stipends. Don't ask...! Khorixas is lovely, but I wouldn't want to live there again.

I use incandescent light bulbs. You don't need a lot of heat...in fact you should try make sure the box doesn't go much about 40'C

I use silverside or London broil normally. Whatever is cheapest and a large cut. You can use more expensive beef if you want, rump is ideal!
