Making a Katana Kitchen Knife | The Samurai Challenge (Viewer Submission)

In this video I make a katana inspired kitchen slicer. I forged several different types of steel into a billet of 7-layer pattern welded steel I made, attempting the Soshu Kitae method. The billet contains 80CrV2 steel on the cutting edge and spine, with a mild steel core in the center. The final billet is a go mai consisting of 228-layer damascus, 15N20, Core billet, 15N20, 228-layer damascus. Typically a medium carbon steel would be used in place of the 15N20 layer. I didn’t have any medium carbon steel, and the 15N20 layer would provide a nice transition on the bevels from the damascus outer cladding to the 80CrV2 cutting edge. Unfortunately, in order to get the blade thin enough to function as a kitchen knife I virtually ground through all of the damascus outer cladding. You can see in the test etch that there are large areas of exposed 15N20, and even some areas that go all the way to the core steel.
The handle was constructed from a block of stabilized maple burl, (2) layers of copper, a layer of black G10, and a small block of green dyed stabilized maple burl. The handle was secured with epoxy and a brass pin. I sanded the handle up to 600 grit, and polished it on the buffing wheel. I finished it with (3) costs of Odie’s Oil, allowing at least 12 hours of cure time in between coats.

I appreciate your commitment to the craft. beautiful knife. It amazes me how many of the channels participating in this challenge are cutting corners and just shaping their blades out of a single bar or leaf spring.

Thanks, I really appreciate that! I don't have any experience with Japanese sword making, so I saw this build as a great way to learn about something I wouldn't otherwise try. Obviously I've just barely scratched the surface of learning about Japanese bladesmith techniques, but nevertheless I'm glad I went this route in the build. In all the other channels' defense, the challenge was to make a samurai inspired build of your own, not necessarily to make an authentic Japanese blade. I thought it was cool to see all the different directions that people went with the challenge. Thanks for watching! 🤙

@@DavidMoonForge it isn't about being authentic. It's about effort. Anyone with a hammer and a sufficient heat source can cut and hammer a bar of steel to resemble a sword. A real smith puts the effort in and folds the steel for added durability and aesthetic value.

@@rytramprophet843 no, it's not that one. Heavy Forge melted steel into blooms in the bottom of a coal fire and then folded it several times and showed the grain structure changes under a microscope. The final result looked pretty neat, but it was also interesting to see the grain structure evolve.

I wonder if not enough soak time would cause not enough cross grain growth. That being the reason you can see the lines of the mild steel. Idk. Just a giess

Interesting. I've never done any forge welding with mild steel before. I'd guess I had the billet in the forge for around 15 minutes or so for the first heat as the forge got up to full temp, and then probably around 8 - 10 minutes between each subsequent heat.

Yeah, this was definitely a longer build than most. I'd guess somewhere around 40-hours or so start to finish.

Yeah, I love the aesthetics of twist damascus. I've got a small billet of the katana steel from this build left over that I want to forge a thicker EDC type knife with. That should show the steel like I wanted in this build. I'm curious to see what it will look like. Thanks for watching 🤙

Thanks dude! The press is the 12-ton press from Coal Iron Works. It's about the lowest barrier to entry press out there. I put off getting a press for a long time, but now that I have one it's invaluable to my knife making. The only problem now is that I want to upgrade to the 25-ton press.
