I remember back in the Philippines as a kid my grandma would always cook us arroz caldo with chicken and hard boiled egg when one of us was sick... you may wanna cook that for Chloe...but I think you did a really good job cooking beef mechado...paalam mula sa Texas....
btw, here in the philippines... the perfect meal when someone or filipinos get sick (or during the rain / comfort food), it's an arroz caldo and Filipino chicken sopas. next time you will try it!
Hoping Chloe will cook "Salmon Belly Sinigang" in the future. I would like to see Jonny goes "inuman" (drinking session with red horse beers) with friends and trying filipino "pulutan" (appetizers while drinking beer) especially sisig and chicharon bulaklak. Also I want to see Chloe cooks filipino food during holidays with family and friends, and see their reactions.
We have a dish here in the Philippines, we call it, pork or shrimp or fish kilawin, you can boil or blunch the meat before you mix the other recipes. I love it,

Ooww... chloe looks a little... i miss eating mechado...beef is expensive nowaday... thumbs up to you jonny. I cook my mechado the old style😊. I soak the beef first in calamansi juice first for 15mins. Then boil it with a little bit of water, onions, pepper corn and bay/laurel leaves until it tender. Then sauté it with onions, garlic and let it sweat for 15 mins. Add in the tomato paste, then tomato sauce and simmer for 15mins. Then add in the potatoes and carrots, simmer again for 15mins. Then add in the bell peppers and simmer again for 5 mins. And it ready to serve...
I've watched this video and was hooked to watch the earlier vlogs. This is very interesting, instead of buying the food and reacting on it, you actually pulled the efforts to cook and filmed the process. You guys just earned another subscriber. Kudos for the good job.
Whenever you make a tomato based stew like caldereta, mechado, etc. Try to sear your veggies (carrots, potato, bell peppers). It tastes better that way. And to avoid it being mushy.

try some comfort foods, like lugaw or goto (wc is basically rice porridge with chicken meat or beef tripe) and champorado which is also a type of rice porridge but its made with cocoa chocolate.. those are very good for times when you feel under the weather..

You can make your own liver sauce, by sauteing chicken liver with garlic, onion, pepper and salt and other spices you like. Then, blend it. You can just say "Reno"... your Filipino friend already know that you are referring to a liver spread. It is common in the Philippines, we used "Maggi" referring to an instant noodles, "Magic" for flavor enhancer, "Datu Puti" for vinegar and "Silver Swan for soy sauce". Also, we call a toothpaste - "Colgate", "Palmolive" with shampoo, and "Kodak" with photo negative film or to have a photo.

When someone in the family is feeling under the weather or feeling ill, the dish that is/are commonly served are Sinigang(pork, shrimp and/or fish), Tinolang Manok and Nilagang Baboy or Baka. It is believed that these dishes are very nutritious for your body especially the Tinola 😉.
For snack, lumpiang gulay with vinigy dip, lumpiang turon(saba bananas and ripe jackfruit both can be found in frozen section of Asian grocer) dynamite (green long chilies with cheese) and dip in mayo ketchup

Aside from Menudo, Mechado, Afrirada, and Kaldereta, there’s 1 more dish that’s mostly prepared during special ocassion. And that is Morcon, it’s a big sliced of beef which is rolled with pickles, carrots, hotdog and other spices in the middle and tied with a thread before cooking. It’s served sliced similar to Embutido.

Bay leaf is from the bay laurel tree (also called laurel in Tagalog). "Rest on ones laurels" expresses some pride sustained from past achievements. Like being declared a winner with a crown made of bay laurel leaves, as practiced in ancient Greek athletics or some such contests. You guys can rest on your laurels for having learned to cook a lot of dishes. Try cookibg some seafoods too.
I really love how Jonny is trying to learn tagalog and so cute even when he could be butchering his words.. but Chloe is spot on about the mechado, menudo and all. Fact. Mechado means “wickered”. The original recipe or process has a thin strip of pork fat inserted in a slab of beef or bigger pieces of beef to moisten them, just like a candle wick.
1) I think you did a good job. Whenever I cook Mechado, the beef slices could've been bigger like roast beef slices. I never marinade my Mechado, Caldereta even my adobo I don't marinade. I just add all the ingredients and let it simmer away. When the sauce gets reduced, then you serve. 2) your tagalog is getting better and more natural. 3) go to beer is san Mig light

Best trick to filipino dishes like adobo, kaldereta, asado & menudo is to age it for 1-2 days, put it in a air tight container in freezer then just reheat it.

Food Suggestion: For something different, why not try making Lomi. Its a thick soup with noodles. Theres a lot of versions of it, the original Batangas Lomi is packed with a lot of ingredients, and yet there are more simple ones that dont have a lot of ingredients. this would have been a good meal for Chloe, being sick and all, but also a great meal for cold weather or rainy weather. I envy you guys having those food! Because of this pandemic and all Finding the right ingredients for certain dish is kinda hard! I dont know in other province but here in our province its hard to get even the simplest condiments! And beef meat or karneng baka is kinda expensive compare to chicken or pork or fish! As always, good video. I think you did a great job in cooking it. The small mishaps is what makes it your own. We can now say you have your own family recipe for Mechado. :) Try cooking Chapsuey, Laing or Munggo so you know we also have veggie-based dishes too. But dont forget to pair it with some fried fish or any protein actually.
