If you let the chocolate halfway set up, use a knife and cut your pieces and then let it solidify. You will be able to get any shape your want.

Vienetta is £1 in the UK ($1.37), this is why it's okay that it tastes like crap. It's considered a very poor, low quality ice cream with a 1990s vibe - only eaten for nostalgia.

Same in the Netherlands and Germany. Also, it used to be made with better ingrediënts and be a bit more flavourful. Not spectacular, but not as tasteless as it has been these past 5 years or so. We had it every year for Christmas since I was a kid and it changed a lot in 35 years. First the piping was less detailed, then the flavour completely disappeared. Sad really.

what I learned after years of reading and watching recipes, is that if the recipe calls for you to mix your yolks first and then wash and dry your mixers and then whip your whites, no way the author made it by themselves-it's the most basic economical kitchen move, save your time and energy and water and mix the damn whites first! your semifreddo looks amazing, the color is (to me) more appealing than the bleachy Viennetta and just by looking at it, I'd say it's a rich vanilla taste, so it's even cooler you made it minty. nicely done June!

@@annerambling9678 oh I wasn't refering to that at all-honestly, I haven't paid attention to that bit since the video is edited. But in this case, I don't think it matters, since every mixture goes in the fridge to cool before they come together. Tempering matters when you're combining elements that are cooled and heated, and to avoid things like egg coagulation.

Hey June!!! You can actually make semifreddo with cooked eggs, it’s called “parfait” here in Italy. Basically you can substitute sugar with sugar syrup at 121º C 💪🏼, making respectively Italian meringue instead of French meringue and “pâte a bombe” instead of raw egg yolks and sugar. Surely it is a little more time consuming (and not the easiest thing to do), but you’ll end up with an ice/sugar crystal-free texture and, most importantly, everyone can enjoy it 🥰😘 Love your videos btw!!!💕💕💕

Wow, good job June! As an Italian, I must confess I never liked Viennetta since it appeared on the market in the '90, if I recall well. My family loved it and it was very often their dessert of election, especially for summer gatherings. I just ate a few bites with more crispy chocolate and gave the leftover "cream" to my dad. Pretty sure a homemade version with better quality ingredients and a personalized flavouring would appeal me more too (I'm thinking maybe coffee or matcha or - even though I think you'd hate it - liquorice).

Also - both at home and in my job as a cook - I choose not to consume or serve raw eggs, but it's pretty simple to pasteurize eggs (or even simpler to buy them already pasteurized in liquid form) that this wouldn't be a problem.

Here's how it is, vanilla icecream with thin flakes of chocholate is always good. It just is. I used to make vanilla icecream at home and use the cheap "chocolate for cooking" they sell here in former Yugoslavia. I would melt it in a little butter or oil on low heat on the stove and just poor on greased paper. Cool it in the freezer. Tempering is pointless in this case. Then I would break the chocolate into smaller flakes and stir them into the icecream. Lovely 🙂 I also used to add peppermint.

In Germany Vienetta is about 1-2€ and there is another icecream maybe you will like more „ langnese königsrolle“ it means „kingsroll“

I remember seeing these in stores all the time as a kid, but it was always too expensive for us. When I finally tried it, I was disappointed. This one looks delicious and I need to make it, now.

Thanks for the video. Never heard of semifreddo before. I just use the heavy cream + condensed milk mixer recipe for ice cream cake. Since we don't have heavy cream in this country, I use whipping cream powder instead of heavy cream. It turns out great. I really should try making those thin layers of chocolate. I usually just make a ganache with a bit of glucose syrup mixed with homemade chocolate ice cream then oreo layer then vanilla ice cream on top.

Well done. Yours is so much better in every sense. Viennetta is an old desert in the old continent, out of fashion certainly. I can't understand the fuss in the US. Also semifreddo is a type of desert not the cream itself. Like ice cream you can have various tastes and shapes. Sometimes the whites are substituted for mascarpone for sime more indulgence

I don't know if this will make you happy or sad, but in Massachusetts & New Hampshire there is a supermarket named 'Market Basket' that carries the Viennetta Ice Cream Cake by good humor. what I remember is that the cakes are placed in a different location from the daily ice cream. look at the end caps and cake storage areas. I was curious so looked on my grocery store app and ours has it! $5.49 for us (Chicagoland), you definitely got that NYC upcharge at $8+! Might have to get it next time, but still not sure if it’s worth it.

Higher quality whipping cream with higher fat content. Crystallization occurs with more water content, especially when they're in concentrated pockets (from, for example, not mixing well enough). But they're pretty evenly dispersed that I don't mind them.

Pretty sure in original Vienetta there isn't even chocolate, but a chocolate-fat thing... yours looks SOOOO much better and the peppermint plavor made me drool so much until I realized we still had peppermint icecream with chocolate thins in it in the house. Jeez, you need a disclaimer for junkies for your videos! *lol*

That expensive!!?? Omg. When you or if you ever travel to the Netherlands. Go check out our different flavours in the grocerie stores. This is something I grew up with (the middle part is soo good) but not for the amount you had to pay 🙈

Viennetta is also very expensive and boring-tasting in Indonesia. At some point it was very sought after but now it's pretty much like any other ice cream.

June, have you tried stracciatella gelato? It doesn't come in a fancy loaf shape, but it still has texture and feels like more of a flavor boost compared to viennetta.

What about pouring chocolate shell layers in between? I think its just chocolate and coconut oil. Peanut butter shell AND chocolate shell would be even better!

Same thing with the disappointment with the Vienetta. I managed to track one down and was underwhelmed at the eating. Maybe all the hype built too much expectations.

There are vegan options for chocolate and for ice cream.. And there are pills for lactose intolerance.

@@PurpleCows There is no lactose left in hard cheese. It disappears gradually while it matures and none remains after 3-6 months. Almost all hard cheese is aged at least 6 months, more commonly 12 (or even longer).

I'd think so! The challenge with folding in peanut butter is that it is dense and harder to prevent it from smooshing some of the foamy texture of the semifredo Maybe doing a peanut butter swirl???

Vienetta isn't made in the US. Over here in Sweden it costs $2.50 in the stores. But I agree, it's not very tasty.

I thought the chocolate was magic shell. Instantly hardens when poured on top of ice cream. The hard part is making the ice cream.
