Exactly, they killed the pasta. The pasta literally dies, if you take the pasta out, immediately add it to the pan with sauce. Otherwise it dies very fast. this video is soo wrong on so many levels
Hello lovely people!! If Pasta Grannies and Gennaro Contaldo have taught me anything, you bring the water to a boil, then reduce the heat to simmer, then add the salt, then add the pasta. This seasons your pasta (you can add pepper later) Don’t use pre-grated parmigiana, it’s not 100 cheese l, it contains Anticoagulants. Do not run your pasta under cold water. Use the pasta water to make the sauce go further. It also contains the salt and the starch from the pasta, it will also help the sauce “stick” to the pasta. No idea about the truffle, I’m a pauper 😂😂😂 ❤❤❤
Love your videos. Here’s my advice…. Always keep some of the pasta water on hand after you cook the pasta bc the water will help emulsify. And try using a good quality truffle oil instead. The flavor will be more intense bc of the oil. And lastly please NEVER use pre grated cheese. ALWAYS buy a good quality chunk of cheese to grate fresh.
Tips: Too much pasta for that amount of sauce. And never put salt on pasta after it's cooked. White truffle is maybe the most expensive ingredient for a pasta dish. Next time you cook, try to use the fresh, amazing, tasty and less pricey Italian vegetables.
Some good advice here. I'll reinforce the use of freshly grated Parmigiano Reggiano instead of packaged. Also take the pasta directly out of the water into the pan. You can add pasta water as needed to loosen it up. I agree there was too much pasta in your pan. Since you didn't have the right tools to shave the truffle I would have tried to use the horizontal linear opening on your hand grater if there was one. You guys are great! We always look forward to your videos.
Oh man... you guys had way too much pasta and very little truffle. Why not add that whole jar of salsa con tartufo bianco to your buttered noodles? It was hard to watch you guys add the pesto at the end! Oooof! 😨 But nonetheless, this was entertaining! And same here, I also like saucy pasta. You guys could have added some pasta cooking water at the end and mix it in for that saucy texture. It's amazing what pasta water can do!
Italian food shouldn't be eaten at a restaurant. You eat it at home, make it yourself it's soo simple. Make a creamy sauce from scratch, you can have a saucy creamy pasta in 15 min. At a restaurant it's not as good. Italian food is amazing if u know how to make it yourself. All you have to do is make a sauce in a pan, and the pasta water should be your base, never drain your pasta, the pasta water is sooo important, it will blend and create a cream with the cheese, butter and whatever ingredients you'd like to add and you can make it very creamy, this was dry and overcooked. Fresh pasta takes 2 min, and then you finish it in the pan for another 2 min
You should always UNDERCOOK the pasta, if it says 4 min, take it out after 2 or 3 min and then finish it in The pan and add a latel of pasta water.. Omggg, you overcooked the PASTA, YOU even waited til she did a countdown even AFTER HE TASTED IT AND NOTICED THAT IT WAS OVERCOOKED. UNREAL, IT'S Fresh pasta, it only takes 2 min. Don't follow instructions or timers or online recipes ffs.

Please delete this video😢 the guy added salt on the pasta. The guy ADDED SALT ON THE PASTA, IT WAS DRY AND OVERCOOKED. THEY THREW AWAY THE PASTA WATER, THEY DID EVERYTHING WRONG, PLEASE, MY HUSBAND IS ITALIAN, DELETE THIS VIDEO RIGHT NOW, NEVER ADD SALT TO THE PASTA WTFFFFFFFF
