Fantastic. It's good to watch an expert doing his stuff. Although I can't believe his beautiful machine from Italy didn't come with a proper handle and not a bulky old shifter. He handled it well tho. ;)

It appears you are soaking lemons, along with the natural casings. What does this do?

Putting vinegar in the water makes the casings softer, I'm guessing the acid in the lemon does the same thing.

Italian sausages can be done just salt and pepper, then fennel or chilli pepper......... All the variants you mention is personal mods, not the real stuff.
