It often also contains mustard and other spices. I feel like if you used the wrong brand of mayo, you could easily end up with some off flavors in your cake.

Not gonna lie, this show is VERY high in production level. It's a very simple set, simple (yet goofy) premise. The ability to subvert the audience's expectation of foods and ingredients. Having Babbi come by later to do a test taste. It feels like this show should be on the Food Network for sure.

Sardines and other oily canned fish can be a great umami booster. I'm thinking a sauce or salad dressing. Alternatively, a hot-honey and sardine neapolitan style pizza.

My grandma makes a “mayo cake” where she substitutes oil and eggs with mayo. It is absolutely delicious and you can’t tell mayo is in it. Definitely an underrated ingredient!

Mayo's just egg and oil, really, so it makes for a very moist cake. People get offput by the smell and forget/don't know what it really is.

Same! Mayo is basically oil and eggs, it shouldn't be too hard to put it in a cake. Heck, I've already seen it happen. And coffee cake is a thing. It just makes sense.

When I saw the thumbnail, I was definitely curious how the play on pasta would be with those ingredients. If I had to combine coffee and mayonnaise, it would probably go into a dessert of sorts; so the thought of pasta to combine these two ingredients really piqued my interest, that’s for sure! Edit: This whole meal incorporating two ingredients in a plethora of ways is really awesome! Looks absolutely delicious

Coffee. Stark. Bitter. Filled with energy but very practical. Down to earth. Hot, but missing a sweetness to curb its naturally dark temperment. Mayonnaise. Light. Fluffy. Whimsical yet cloying. Versatile and indispensible in so many applications and the very best friend to some of your best friends (potatoes, eggs and tuna fish or cabbage). You would think they would clash. But mayo has a nostalgia and an openess that coffee responds to. Coffee is stark and certainly a morning person, mayo is more relaxed. Yet their chemistry, though unlikely, is ultimately undeniable. For mayo is an emulsifier.

These ingredients immediately reminded me of an episode of Diners, Drive-Ins, and Dives where someone made a red-eye gravy mayo for a burrito. If I remember correctly, the ingredients were mayo, a couple tbsp of super strong coffee, tabasco, and I'm not sure what else. If it were me, I'd add some ranch dressing, a little beef Oxo and maybe some oregano.

Okay. Mayo and Coffee is tough but on Chopped you would have had 20 minutes to combine them plus two other usually dissimilar ingredients into a composed meal. So, where this is an interesting experiment it kind of falls short of being thrilling because, you know, Chopped. But Kendall has excellent presentation skills and it's always fun to watch you guys in the kitchen and the recipe sounds interesting and fun.
