If you ever wondered if you can make Rigatoni by hand, the answer is yes and we’re going to be making that today and pairing it with a ragu made of the leftovers from our Philly Roast Pork sandwich. This duo of meals from that one recipe is a must try. I will make Philly Roast Pork more often just to make this recipe, it is crazy good.

@@mattymattffs indeed! I mostly watch this, Guga Foods, Iron Chef Dad, and Joshua Weissman. There are a few others but those are the main ones. Josh is great but always uses the most impossible to find ingredients.

That's crazy! I literally just said to my wife, "Hey this leftover pork and rapini from that sandwich would go well with some rigatoni. We should have that for dinner tomorrow" then I turn on youtube and see this!

Respect to you my guy, I really love how you take the time to teach everyone how to make pasta from scratch which can take a long time to perfect and meanwhile respecting the Italian culture and as to how pasta is made there despite the dish itself not being quite traditional. I'm telling you right now if Vincenzo reacted to this video he'd be extremely proud !!💪💪🙌

Interesting! I'm Italian and I've never seen handmade rigatoni...I'm pretty sure that's really delicious but it seems a hard and long job...however it looks fun and tasty. I think I can only do it to impress someone special..

Homemade pasta is too much work. I did it a few Times. IMHO, not worth it. Gnocchi, yes. It's better homemade and yes, it's easy and quick. Great video!

"Leftovers" has a negative vibe in the US. What's the Italian word for them (if there is one). Thanks for this one so much! Having switched to predominantly home cooked meals, in a small household -- any ideas you can provide where you are not "Meal" planning, but planning on how to incorporate those meals into next day's delights and also future delicious meals is SO SPOT ON. I don't have leftover pork roast, but hope that leftover frozen beef from a french style cottage pie will work with a couple of tweeks. It's about cutting down on waste, amping up flavor without always starting from scratch, washing endless pans from "quick" meals, etc. I'm thinking of a weekly rotation between Italian and Indian dishes.

Lol rigatoni we’re everts ones fav when growing up, around 4:30 we would be heading home cause everyone had to be home at 5 for dinner that’s right 5 sharp and of course what are u having tonight and if there were 25 of us 10 would be having rigatoni the others would be salivating lol italians used to eat macaroni 3 times a week, it wasn’t called PASTA lol

Apprezzabile il lavoro che fa, ma comunque io quel lavoro non lo farei. Perché proprio i rigatoni, ma anche penne o altra pasta secca, quando uno compra un’ottima marca in un negozio, non c’è bisogno di fare quel lavoro in casa. Se si tratta di gnocchi, tagliatelle fresche, lasagne fresche e cose del genere, ok…. ma quel tipo di pasta si compra nel negozio.

You didn’t make rigatoni. The ridges on rigatoni run parallel to the long side not cross-wise (which is the only option with a pasta board). If you want to make rigatoni you must extrude it through a die which will create ridges in the correct orientation. You made large Garganelli. 😝
