KFC in Australia is actually good. Very rarely does it disappoint. Admittedly most fast food in Australia is markedly better than what it seems to be in America.

I worked at a KFC when I was in high school, which was way back in the 80s. The coleslaw was freshly made, literally cabbage, onions, and carrots made in a giant circular chopper. The dressing was made (can't remember recipe) and then added. Biscuits were made in a mixer with real buttermilk. The dough was then rolled out, cut, baked, and brushed with butter. (The smell was amazing!!) Chicken was dipped in water and then tossed in breading (flour, buttermilk powder, and the packet of secret herbs and spices), then arranged a specific way on racks and fried in a giant pressure cooker. The "cracklings" that collected at the bottom of the cooker were used to make the gravy. All in all, it was really good. There were at least 10 employees per shift, and this was a small shop located inside a mall. Wonderful capitalism, offered by PepsiCo Corp, slashed staff and cut down quality by 80%. It all became instant this and frozen that. My friend brought over some KFC last year (unaware of my past relationship I had with the company lol) and it was HORRIBLE. I couldn't get through it. They ruined this amazing food just so a shareholder or CEO can buy a 4th yacht. Greed is destroying the fabric of our society, our past, while the 1% counts on us to numb it all out, take our Xanax, and poison ourselves with barely edible chemical slop they pass off as food. It's nice to see interest in having standards again. These are the changes I'm excited to see. Good job, Gen Z. 👏

Depends which kfc you go to in which country. Korean is the worst and tastes nothing like USA’s kfc. Josh is doing the typical KFC from the states. If you are in Japan, not sure what their kfc tastes like.

KFC around here in Germany is actually completely fine, but I started to make my own "KFC style chicken" a while ago and it just is miles better. I also started to make Donuts, Pizza, Burgers, Sandwiches and other "fast food" myself. It's just so much better than the cheap crap you get from the fast food chains. Your recipes seem to be great, really fits my style of cooking, thanks for the work!

As a person who worked in a KFC... i must say that he is absolutely right. if you KNEW how your food was "cooked" you wouldn't want to eat there ever again... I worked in there for 1 week before i left as i had arguments with the F manager lol. Im serious lol... the chicken was barely, BARELY safe for consumption, the mayo, ketchup and mustard containers were extremely smelly since they refill them up without washing. Same with the avocado, they just added more to it without cleaning the contained and mixing old avocado with new avocado, it was a mess. they dont cleaned the lettuce either. Also, they needed to cut some stuff so the manager "DECIDED" that they cut the metal in the F kitchen. Where the sparks of metal were being thrown directly into the F bread that makes the sandwich, i told them that it was a complete disaster and that anything like that should be done outside, another was that they soaked chicken in water before using flour and then fry them, nothing wrong there except that they only changed water ONCE per F day.... imagine throwing RAW chicken into a bucket with water, taking them out and repeat that process about 3 times per minute... for the whole F day, and the kitchen is 30°C/86°F... you can expect that water to be full of bacteria already, i mentioned all these problems every day to the manager. The only thing safe to eat were potato fries .... well i was fired LOL. Well I'm glad, after the first day i refused to eat their food and brought mine. Lets not speak about how filthy the kitchen was.

@@stanvanillo9831 Not just a show - quality varies wildly based on restaurant practices. Some places actually enforce rules about throwing out food that's been on the warmer for too long...some just say 'It's legally allowable, so it's fine.' The difference between doing what's acceptable practice and taking pride in your work. Probably the difference of employee appreciation, high volume sales and proper planning in operation, as well. A KFC would have more-fresh chicken in the evenings, when everyone is ordering chicken.

@@retna1x363 cookie season is different everywhere from what I’ve figured out. They rotate “seasons” by region. I think it’s so manufacturing of the cookies is not overwhelmed during only 1 part of the year.

Restaurants exist to save people time. If you think about your hourly wage and the amount of time it takes to make this meal, it probably makes way more sense to get it from a restaurant, unless it's a special occasion.

@@bettyir4302 Youre neglecting a restaurants capability to purchase food in bulk and cook at scale. FAST FOOD restaurants exist to save you time. A real restaurant does not have nearly the profit margins industrial fast food chains do. Plus restaurants have more direct access to fresh produce and get first dibs from butchers since thats where so much of their demand comes from.

"Cook's Illustrated" turned me on to putting butter in a freezer (for 15-30 minutes) and then grating it into one's biscuit flour. That approach seems to work pretty well for me, for getting the requisite flaky layers. Also, I swear by cream cheese in one's mashed potatoes.

One of the last memories I have of my grandmother was when she was in hospice care with stage 4 pancreatic cancer and I was sitting by her side while we ate KFC that we picked up on the way to see her because, hey she can't keep any food down so it might as well be something she enjoyed. I was probably 12 or 13 at the time and sat by her side and spoon fed her some macaroni and cheese because she was too weak to eat much herself. So yes I agree, KFC is definitely hospital food

I worked at Red Robin’s. It is not fancy, its all fast food. All of the fried foods were frozen first and the beef was not that good. The only thing that was actually good quality was the grilled chicken. Chef “mike” works there.

You don't need to think at all as a cook at Red Robin, there's a conveyor broiler with 2 different belt speeds for some pink or no pink, then you just drop the patty on the grill and sear it.

KFC is my favorite fast food restaurant, and I can't believe they gave you dry chicken. It's typically the exact opposite and the skin is so wet that it comes off with a simple touch 😂

dry chicken, not dry skin. The meat itself is dry, the skin indeed is soft. Though I share your confusion, the KFC around where I live I find the chicken to be quite fine, nothing spectacular bgut defiantely not dry. And I don't know what they're talking about with "sour" taste in the coleslaw, because the coleslaw we get from KFC when we go there is not sour at all, it's a bit sweet and slightly acidic, but not sour. Do they just happen to have a terrible KFC near them or do I just have an above average one near me...

when cabbage is cut it releases its juices that contain lactic acid, the longer it sits in its juices the more "sour" it gets. sauerkraut is literally sliced cabbage fermenting in the lactic acid of its juices

Nope. Cabbage juice is pH neutral. While the sauer in sauerkraut is largely lactic acid, it’s produced by the bacteria and yeast on the surface of the vegetable metabolizing the sugars and starches in the vegetable. Because red cabbage juice is pH neutral and contains several pH sensitive color compounds, it’s a popular science activity for children to use it as a pH indicator.

I have one upgrade to that biscuit technique. It is exactly how I make mine but I skip the re-rolling and extra handling by not making my biscuits round. They are square. Every biscuit perfect.

I actually really liked KFC back in the states. I live in Japan now and KFC is absolutely atrocious here (seasoning on the chicken is different and it's greasier, no mashed potatoes and gravy, no Mac n cheese, coleslaw comes in the tiniest cup, biscuits are on the sweeter side), so I'm really happy to see a video for all of my favorites from KFC 🥺 hopefully my husband and I can recreate this sometime 😌

To make the gravy closer to theirs you could have taken the bits of dredge from the bottom of the oil after cooking the chicken and blended them into a paste to help thicken and flavor.

Couldn't find celery powder so I had to get celery salt and I reduced the amount of normal salt to compensate. And I have smoked paprika instead of sweet. Planning on cooking it tonight. Hopefully it still turns out OK!

KFC Gravy in England is pimp. They make it with the scraps of chicken from the fryer. Sounds crazy but it’s insane. Only issue is it’s inconsistent as it’s made fresh and differs depending on which store you go to. Would love to see a recipe on it.

It would be cool if he did some, since it is interesting and new ground. If you like vegan food, I would recommend checking out some Indian recipes, since they are commonly vegan. I would also recommend the Korean Vegan. Good luck on your journey 👍

I have only ever once had a good, and compelte meal from KFC, and I've had KFC in like 8 different countries over the past decade. It's a complete shambles. I'm glad I now have a recepie for Papa Fried Chicken!

Im a Chinese student studying in UK. KFC in China is ok (chicken is a little expensive but at least decently seasoned, the crust is not enough tho). KFC in UK is on another f level that after 2 or 3 times I decided that since there's no Jollibee in my city, I MUST MAKE MY OWN FRIED CHICKEN. And I'm not even sure I put in the exact same amount of spices compared to Josh's recipe, it is still TASTY AF. This is a must try recipe.

What about other fast food chains? In the US it's just a general rule that fast food is gonna be made as cheaply as possible. There's some higher quality ones and people have their favorites, but the majority are terrible compared to a real restaurant. My parents literally didn't let me have KFC growing up so I can't make the comparison, but maybe that tells you something haha

not sure about in america but in Australia kfc is decent and not dry, only sometimes the drumsticks are if you order at a late time but the zinger box is the best thing they do

While testing, you should make sure that all the items are at the same temperature. Because, just prepared will be at a higher temperature and thus easy to identify.
