In this video I am going to share with you a Malaysian Chicken Curry Recipe.
This rich and creamy chicken curry is packed with flavors and is so indulging. The added lemongrass and curry leaves will give you that mouth-watering aroma from afar.
You may find that there are many different types and variations of curries in Malaysia due to the multi-ethnic society. There are no right or wrong recipes for cooking a good Malaysian chicken curry.

Several notes here to share with you:
💡 I used a mixture of chicken thigh, drumstick and wings in this recipe. These parts of the chicken have more flavor and will make the curry much tastier.
💡 I used large dried chilies in this recipe. These large dried chilies have less heat and will give the curry a beautiful red color.
💡 I used Alagappa’s meat curry powder in this recipe. You could use any other curry powder that you prefer.
💡 I used Coconut Oil in this recipe. You could use any other types of oil that you prefer.
💡 I added ground coriander, ground cumin, cinnamon quill, star anise, green cardamom and star anise in this recipe. These spices will give that extra notch to both the flavors and fragrance of the curry.
💡 I used Yukon Gold Potatoes in this recipe. Yukon Gold potatoes have a rich and creamy texture. You could use any other types of potatoes that you prefer. It is recommended to cut the potatoes into a large size so that they will turn soft when the chicken is cooked through at the same time.
Here is a quick rundown of the recipe:
INGREDIENTS ##
MALAYSIAN CHICKEN CURRY
========================
✅️ ±1.3 Kg Chicken, cut
✅️ 1 Litre Coconut Milk
✅️ 150 Gm Coconut Oil
✅️ 5 Tbsp Meat Curry Powder
✅️ 2 Tbsp Ground Coriander
✅️ 1 Tbsp Ground Cumin
✅️ 5 Large Chilies, deseeded and softened
✅️ 3 Stalks Curry Leaves
✅️ 2 Stalks Lemongrass, 10cm from bottom only
✅️ 2 Large Potatoes, peeled and cut into quarters
✅️ 1 Stick Cinnamon Quill
✅️ 3 Florets Star Anise
✅️ 5 Pods Green Cardamom
✅️ 7 Cloves
✅️ 5 Bulbs Shallots, peeled and halves
✅️ 1 Bulb Garlic, peeled
✅️ ±50 Gm Ginger, peeled and cut
✅️ ±15 Gm Turmeric, cut
✅️ ½ Cup Water
✅️ 1 Tsp Salt
METHOD OF PREPARATION##
STEP 1 ##
Cut the dried chilies to remove their seeds and soaked them in warm water to soften. Cut the lemongrass 10cm from its bottom and discard the green portion. Cut the lemongrass into halves and crush them with a pestle before transferring them to a bowl and then set aside. Blend the shallots, garlic, ginger, turmeric and softened dried chili prepared earlier with 100ml of water into a fine paste and set aside. Mix the meat curry powder with ground coriander and ground cumin in a big bowl with 150ml of water and stir to a paste.
STEP 2 ##
Add the coconut oil in a pot and stir them over MEDIUM heat until the oil is melted. Use a wooden chopstick to check if the oil is HOT and ready for frying. Add the blended mixture prepared earlier to the pot and stir them for 2 to 3 mins, until they are slightly dry. Add the paste mixture prepared earlier and stir the mixture thoroughly. Constantly stir the mixture until oil is separated, carefully not to burn the bottom.
Add ½ cup of plain water to the pot when oil starts to separate. Continue to stir and scrape the brown bits off the bottom of the pan until oil is separated again. Add the cinnamon quill, star anise, green cardamom, cloves, lemongrass (prepared earlier) and curry leaves to the pot. Stir them together to mix well. Constantly stir for 2 to 3 mins or until most of the liquid has evaporated.
Add the chicken to the pot and stir them to mix well for 1 min. Add the potatoes and continue to stir for another 1 min before adding the salt. Stir the mixture to mix well and add the coconut milk to the pot. Continue to stir until they are thoroughly mixed. Bring the curry to a boil over HIGH heat. Once boiling, briefly stir the mixture and reduce heat to LOW. Cook uncovered over LOW heat for 35 mins or until the chicken is cooked through and the potatoes are soft.
STEP 3 ##
After 35 mins, switch the heat OFF and cover the pot with its lid. Let the chicken curry rest for at least 30 mins before serving.
STEP 4 ##
After 30 mins, voila! The beautiful Malaysian Chicken Curry is now ready to be served. Garnish the chicken curry with sliced chilies and coriander leaves and serve them with a warm bed of rice.

Hi there. Most of the time I used a thick bottomed stainless steel pot to cook my curry. My mum and late grandmother used a stainless steel 'wok' (stir fry pan) to cook their curry. Having tasted curry cooked on both cookware, I would say they turned out to be the same umami taste. I didn't use any other type of cookware so I can't comment on that. My late grandmother used to say that to cook a good food the important thing is how you spend the time to prepare and cook the food not how expensive or good your cookware is. Hope this helps 😊

It's so similar to Bangladeshi Chicken Curry. (Normally we don't use coconut milk/oil for regular chicken curry, but for special occasions we cook with coconut milk)

Hi there. Curry powder is a mixture of spices such as ground coriander, cumin, turmeric and paprika. I am not sure which part of Italy are you located but i did a Google search for Asian grocery store in Italy and quite a few actually pops up. There is Asia Supermarket located at VIA RICASOLI 20, 00185 ROME, ITALY, Pacific Trading s.r.l. located at VIA PRINCIPE EUGENIO, 00185 ROME, ITALY, Asia Mach located at VIA MASCARELLA, 81 ABC, 40126 BOLOGNA, ITALY and Sara's Store located at VIA BAMBAIA 5, 20127 MILAN, ITALY. I believe you should be able to find the ingredients listed in my recipe from any Asian grocery store. Hope this helps. Let me know how it goes 🙂

I wouldn't mind learning how to dry lemongrass for future cooking like in chicken or beef curries.Growing lemongrass. how do I dry and store for future use?

Hi Natalia, you could always grow your own lemongrass for supply. I usually keep the unused lemongrass or leftovers in a zip lock bag and put them in the freezer until needed. Hope this helps 🙂

Hi Annie, I used Alagappa’s meat curry powder in this recipe. Some days I used Baba's meat curry powder. You could use any other meat curry powder that is available to you. Hope this helps 🙂

Hi there. I have never tried to blend my own curry powder before 😊. Typically in Malaysia, it is common for people to use any brand of meat curry powder that is available to them and supplement with some other spices to create the Malaysian flavour. Hope this helps.

Hi there. Typically meat curry powder are curry powder that is used to cook any type of meat dishes. Then there is fish curry powder that is used to cook seafood dishes. Both can be found in any Asian Grocery Store. My preferred brand would be Alagappa's or BABA'S. Hope this helps 😊.

Hi there. I use the largest size dried chili from the asian grocery store. Large dried chili typically have much lesser heat in it. You could use any type of dried chili that you prefer. Hope this helps 🙂

HI Dear, My kids have been always praising their old school canteen chicken curry and I wanted to replicate that and was browsing RU-vid for that kind of chicken gravy recipe and I stumbled upon yours. I didn't have coconut milk at hand but instead used coconut cream and diluted it with water. It turned out nice and my kids loved it. Kept it for 2 days and enjoyed it. Thanks for this simple and delicious recipe. *Maybe I should lessen the coconut cream a bit so it's not too over powering.

I'd love to try this recipe. How many tins of 400ml coconut milk (50% concentration) equals the 1 litre you use?

Hi there. Looking at your question, I cannot help but wonder if you are unable to source fresh coconut milk or canned coconut milk in your area? The issue with using light coconut milk is that the chicken curry will be less creamy. In order to achieve the same creamier taste you have to double the quantity of the 50% concentrate coconut milk in which I would not recommend. To thicken the gravy it would take a much longer cooking time hence overcooking the chicken and potatoes. Having said that, you could try to simmer the 2L 50% concentrate coconut milk over Low heat until they are reduced to 1L before adding them to the chicken. I have never use this method before and not sure if it will work. Hope this helps 🙂

@@NorahsCookingDiary Thanks Norah. We get both fresh and canned coconut milk. I was trying to take the easy path by using canned milk. However, I did try the recipe before you replied. I used two tins of coconut milk. It was really delicious but a bit too creamy, so may reduce to one tin next time. Next stage for me is learning how to extract milk from fresh coconuts.

Hi Cliff, I'm really happy that you enjoy the curry. If I can't source fresh coconut milk, I would sometimes use canned coconut milk too. If you prefer curry that is less creamier you could use canned light coconut milk. If you would like to use fresh coconut milk, all you need to do is add 1L of water to the grated coconut and give it a "massage" for a min before you squeeze out the coconut milk with your bare hands and discard the solids. You will then need to strain the coconut milk with a sieve to further remove any fine solids. Happy cooking😉

Hi there 🙂 I use coconut oil in this recipe. Cold temperature will solidify the coconut oil and liquefy in hot surroundings. You could substitute the coconut oil with any type of oil that you prefer. I use about 1.3kg of chicken in this recipe. Hope this helps 😀

Hi Norah, I plan on using your recipe to cook this delicious chicken curry. 1 - As I only have red chilli powder instead of dried chilli, can you pls. let me know if I should replace the 5 dried chilli with 2 tablespoon of red chilli powder? 2 - And do I mix in the chilli powder together with the other ingredients into the blender? 3 - I only have chicken curry powder, and not meat curry powder. Hi there. 1 - Sure. You could use chili powder to substitute the dried chili. Just so you know, the dried chili used in the recipe has a very mild heat to it. Make sure that the chili powder that you use has somewhat the same heat level. 2 - Sure. Otherwise you could also add this to the meat curry powder mixture. 3 - Absolutely. Any meat curry powder will work for this recipe. Let me know how it goes. Hope this helps 😊

Hi there. You didn't mentioned which country you are in but if there is an Asian grocery store chances are you should be able to get the dried or frozen curry leaves as the substitute for fresh curry leaves. Hope this helps.

This recipe doesn't require galangal. But you could add them if you so desire.👌

Meat curry powder? What is that? That is like saying BBQ sauce. Every curry powder is different. The BBQ sauce/Curry powder is literally what makes the dish. If we don't know the brand you used or the recipe to make it then it is impossible for us to make the dish as you did.
