Ingredients:
For the loaf pan (25 x 11 cm)
baking paper
For the yeast dough:
20 g (¾ oz) fresh yeast
100 ml (⅓ cup + 1 tbsp) warm water
500 g (1 lb 1¾ oz) wheat flour type 550
1 tsp sugar
1 level teaspoon of salt
4 eggs (size M)
100 ml (⅓ cup + 1 tbsp) olive oil
For the filling:
30 basil leaves
125 g (4½ oz) grated mozzarella or
1 drained buffalo mozzarella ball (drained weight 125 g / 4½ oz )
200 g (7 oz) peeled, seeded, finely diced, well drained tomatoes
50 g (1¾ oz) dried pecorino
140g (5 oz) well drained sundried tomatoes in oil
Bake: 180°C / 356°F 50 minutes on top/bottom heat
