Mamaw’s Chicken Salad
5 pounds boneless/skinless chicken breasts, cooked and cubed
1 can sliced water chestnuts, slightly chopped
1 cup celery, finely diced
1 cup pecan pieces
1 cup Craisins
1/2 cup onion, finely diced
1 cup Miracle Whip
1 cup Real Mayonnaise
Cook the chicken and let it cool completely. Cube the chicken and combine in a large bowl with the chopped water chestnuts, celery, pecans, Craisins, and onions. Stir in the Miracle Whip and mayonnaise. Sometimes, depending on the dryness of the chicken, you’ll need to add a little more of the Miracle Whip and mayo to your taste.
Serve on fresh croissants or toasted bread.
