Ingredients : 300g Red Lentils
2 Potatoes
3 Celery Sticks
1 Red Bell Pepper
1 Onion
2 Carrots
Fresh Parsley
150g Canned Tomatoes
100ml Sunflower Oil
Fresh Dill
3-4 Garlic Cloves
3 Bay Leaves
1/2tsp Dried Thyme
1tsp Sweet Paprika
Salt , Black Pepper

Firstly , chop the onion into cubes, bell pepper and celery, chop the carrots into rounds and the potatoes into big cubes .Also chop the garlic and parsley . In a pan , add oil ,onion , carrot, celery and bell pepper , add a pinch of salt and saute for 3-4 minutes. Once the vegetables have softened a bit , add the garlic , thyme and bay leaves , sweet paprika and chopped tomatoes . Add in the lentils , 500ml of warm water so that it covers the lentils by a finger and check if more water is needed throughout the process .
Cover with a lid and let it boil for 10 minutes. After the 10 minutes are up , add in the potatoes and pour in another 300-400ml of warm water. Let it cook on medium heat for about 20-25 minutes .
Add salt , pepper and when the potatoes are fully boiled , turn the heat off and add the parsley and dill , and the lentil and potatoes stew is ready. If you're not doing lent , you can serve this dish with fried sausage , meat or fish . Enjoy !
