This mango pudding is a favorite in my family. Rich, creamy and filled with mango, passion fruit, and coconut milk flavor. This tasty dessert is perfect for hot summer days.

Ingredients for about 6 servings
Creamy Mango pudding:
One large ripe mango, peeled and chopped, about 300 g
4 tablespoons (2 oz/ 60 ml) passion fruit puree or syrup
3 tablespoons (40 g) sugar
2 teaspoons (6 g) agar agar powder
2 cups (16 oz/ 474 ml) milk/ low fat milk
1 cup (8 oz/ 237 ml) coconut milk
Coconut milk jelly:
1 tablespoons sugar
¼ teaspoon (1 g) agar agar powder
1 cup (8 oz/ 237 ml) coconut milk
Toasted shredded coconut (optional)
1. Peel and cut the mango.
2. Mix together sugar with agar agar powder in a bowl. This is to prevent lumps when adding into the liquid.
3. Puree mango, passion fruit, coconut milk, milk and sugar and agar-agar mixture in a blender until smooth.
4. Bring the mixture to a boil and stir until all is combined.
5. When the liquid cools down, pour the mixture into glasses. Let it chill in the refrigerator for about 2 hours or until set.
6. When mango pudding is set, stir together sugar and agar agar powder, and then add coconut milk. Bring it to boil on stove top and stir until combined. When it cools down, pour on top of the pudding and let it set for 1-2 hours.
7. Place some shredded coconut in a nonstick pan on top of the stove. Cook over medium heat and stir frequently until golden brown. Remove from the pan let it cool down. Decorate it on top of the pudding. In addition to fancy decoration, the coconut flakes add crunch to the pudding.
8. Serve and enjoy!
NOTES:
1. Passion fruit puree is the key to make the pudding stand out. If it is not available in your area, increase the sugar to 4 or 5 tablespoons. Different brands of passion fruit purees have different sweetness level. Please adjust the sugar to your preference.
2. Please check the instructions on your agar-agar powder. Different brands have different thickening strength. I like my pudding soft and creamy. If you like it hard, just adds a bit more agar agar powder.
3. Gelatin sheets or gelatin powder can be substituted for agar-agar powder. However, agar agar powder and gelatin have different thickening strength. Please check your brand packaging instruction and adjust the amount accordingly.
