I have never had a Lou Malnati's pie. I live in Texas and have never even been to Chicago. On the other hand, I am a very good home chef and tonight I will be trying my hand at making one of Lou Malnati's, a copycat, certainly or probably not as good...but it's as close as I'm gonna get to tasting this famous brand of pizza. I know a couple of things about the pizza. The dough needs a little butter. The pan needs a little butter before pressing in dough. Use slices of whole milk cheese. Use a good quality canned whole peeled tomato in sauce. Hand crush some of the tomato while tooping pie. Don't get any tomato on the crust. ...and finally, sprinkle a little mixture of Parmesan/Romano/Seasoning on top of pie. Bake at 500F. for 25-30 minutes. Wish me luck!
I grew up eating Malnati's pizza, at their first location, from a very young age. I've also made my own Chicago style pizza. A lot of work, but worth it. Still, I'd recommend getting some Malnati's shipped to you frozen. They're the best Chicago style, and it's definitely worth it.
