I loved watching his show as a kid. Everytime I came home from school my mother was always writing his reciped in her notebook. He's still so fun to watch even now. Great memories for me. He even helped me fall in love with cooking & inspired me to want to become a chef
I love to cook but have never gotten rice right. Finally, I did as he instructed and it was the best rice I have ever made. It is strange, since it really does not feel like a success until the last minute or two. Trust the master, don't fiddle with the process by stirring or fussing, and bingo! Thank you Martin.
I never knew how to make egg fried rice before, it's not as hocus pocus as I imagined it might be. Eggsellent!! I'm going to have to try it out tomorrow, when I've boiled up some rice today, defrosted some salmon fillets, and bought a few ingredients from town when I go tomorrow. 👍

My elder half sister introduced me to fried rice with ikan bilis(anchovies)....in 1960s.....🙋🙌😍😛😌 Indians also use fingers as measure - tools....poor people can't afford measuring scales, l guess!....😍😚
Odd that he said in his first demonstration that a good Chinese chef doesn't use soy sauce, then in the next two fried rice recipes he uses it. By his own description, is he not a good Chinese chef?
He brand he mentioned, Chen Fu Ji, is my brand. I organised the International Fried Rice competition. Adding the egg into the rice is our recipe and before you do that, make sure the rice is steaming hot which temperature hotter than the wok - the catch is turn off the fire before adding the egg so that the egg will wrap around the rice instead of forming on the bottom of the wok.
or soak it in egg york before hand...does the trick too but by the time youre done cooking the rice might gets too dry...so u gotta be fast if you want soft rice... This man is my childhood!
@Cjango Freeman he's also showing the average american how to cook fried rice. The average American do not have a wok nor a heat source hot enough to properly cook a wok-style fried rice.
