Ingredients:
4 goose legs
4-5 onions
8 cloves of garlic
2-3 tablespoons of goose fat
Salt
3 bay leaves
3 strong pinches of black whole pepper
a little water for steaming
Braised cabbage:
1.40 kg red cabbage
3 firm pinches of salt for salting the cabbage, can be adjusted later if needed
2 onions
1 tablespoon of goose fat
50 grams of white sugar
Ground black pepper to taste
1 teaspoon of ground caraway seeds or to taste
about 20 drops of vinegar
5 cl of dry white wine or the same amount of dry sparkling wine
For smashed potatoes with onions:
1.2 kg potatoes
2 tablespoons of fat
Salt
ground black pepper
2 onions
Baking on the Grill
Steam it covered for 120 minutes at 190 C, when it begins to soften, bake it without the lid to a beautiful red color, and crisp skin.
Indoor electric oven
Steam it covered at 180 C for 120 minutes, when it starts to soften, at 210 C bake it without the lid to a beautiful red color, and crisp skin.
The baking time may depend largely on the size of the goose legs.
