So this video is confirming my research on this smoker. Only people who use a decent amount of wood are getting a true bark that I’d normally get in a barrel or offset smoker. Many owners on RU-vid don’t use enough wood in their gravity. Great looking Brisket man!
I mean the thing was solid black before he put it in. Not saying it doesn't look good but how can you even tell what's bark and what's that gunpowder stuff

Iys just personal preference, I tried using paper before and I feel like the paper dried out my brisket. Paper absorbs a ton of juices. Some people say that foil takes away the bark, but I don't agree, I've never had any issues with foil. And I wont use butcher paper again either
