Hi! I hope you could help me. I can't get the right consistency of the cheesecake. It tastes great but my center is too wet and doesn't set completely. I tried to do it 2x and both ended up not as set as yours, mine looks like a melty ice cream texture. I got the same brown color on top though by the end of 25 mins but I needed to increase my oven temp to 500C. Please help. I am not sure what I am doing wrong. Thank you!

@@crystalgale15 Hi Crystal, is it not set even after chilling in the fridge overnight? If so, the most likely cause is that the cheesecake isn't getting cooked through.You may want to get your oven checked out. 500°C is more than double my recommended oven temperature of 230°C and if your oven was actually getting that hot, your cake would probably look like a lump of charcoal after 25 minutes in there. Also, just to double check, you're using US cups to measure the cream right?

@@NoRecipes yes, I am using cups for the measurement and I have left it overnight in the fridge to set. I guess I could try using a scale on my next try. I placed my pan in the middle rack of the oven, should I have put it in a higher rack? Does that make a difference? This is my first time trying to make a cheesecake so I am clueless. Thank you so much for the help!

@@crystalgale15 Ahh that makes more sense. The themostats on most ovens are off by a bit but it sounds like yours may be off by more. You may want to get it looked at. Another option would be to pick up a cheap oven thermometer so you can see how hot the oven is actually getting and you can adjust the thermostat upwards to compensate.

This is genius. I have been looking everywhere on how to line the pan to make that rustic yet neat look. Using the pan bottom makes it much easier!

Thanks! Yea the trick with matcha is to get it fresh. I had some leftover form the matcha brownies I made last month but it was looking paler than I remember so I bought another pack (exact same one) and it was a night and day difference in color.

@@theonetruesarauniya Hi Sara that ups the challenge a bit, but I do love a good challenge. Learning how to make anko properly has been on my list of things to do. This may take me a while to do though as I don't just want to rehash someone else's recipe and put it on here unless I think I can materially improve the method. For example, I spent nearly 20 years perfecting my apple pie recipe before I released it.

As for the ohagi, it's something that isn't a rush to do and is something that could be put on a very low, low back burner. The fact that you even entertained the idea truly made my day. Hi Christina, I'm using Ippodo matcha. I can't remember exactly which one it was, but it's ceremonial grade (meant for drinking) and it was in the middle of the range price wise (around 3000 yen for 40 grams).

Finally, i made it today! These proportions felt a little bit small, for some reason, it didn't look so big like on the video. But the taste was very delicate and nice!

I'm glad you enjoyed it! Yea, the cake is only 6-inches wide so it's not a big one, but it's so rich, I usually cut it into 6 servings. You can use an 8-inch pan and double the recipe, but you will probably need to make some changes to the temperature and baking time.

Yes, that will work, but it will require a bit more work. First you need to bring all of the ingredients up to room temperature. Then, you I would recommend creaming the sugar, matcha and cream cheese before adding the eggs and cream. You'll also want to want to sift the matcha first. Then I would recommend chilling the batter before putting it in the oven (the lower temperature makes it easier to brown the top without overcooking the center).

Hi Edmond, it should work in ramekins, but you're really going to need to crank the heat to get the browning on top in a shorter time without cooking it through all the way since smaller containers are going to hold much less volume.

Odd question, but did you use the same pan for this as you did for the original? This one doesn't seem to rise as dramatically over the lip of the pan. I have become quite a bit obsessed with this small detail, but it affects the browning. I want to get that dramatic capsule of caramelized crown on the top of mine, but the pan I purchased is seemingly too deep. Watching this one and I see it doesn't rise above the lip of the pan for some reason.🤔🕵‍♀😵‍💫

Hi Kathy, it's the same pan. My guess as to why it didn't rise as much has to do with why the surface of this one is much smoother than the original. The reason why the original had a rough surface is because using a blender incorporates a ton of air into the batter. As the cake bakes the air bubbles expand, which is what leads to the rise. It also causes air bubbles to appear on the top surface which then get baked solid, creating a rough surface. For this one I refined the technique and was super diligent about smacking out the air bubbles from the batter which is why it doesn't rise as much and has a smoother top surface. How deep is the pan you're using?

@@NoRecipes The pan I'm using is the Fat Daddio's 6 inch cheesecake pan with removable bottom. It's just shy of 3" deep. I remember that you recommend a 2 1/2" deep pan, but this is the one on your Amazon shop. I have since ordered a Nordic Ware 6 inch pan, which is just shy of 2 1/2". I haven't used that one yet, but I think I might get the results I'm looking for.

Hi Kathy, I'm so sorry about that. The pan I used is 2.4 inches deep, and it's not sold in the US. That's why I'd selected that pan as the closest alternative. I didn't consider the .6 inch difference in height would make such a big difference in browning.

@@NoRecipes I did something experimental today, so I ended up using the deeper pan. I had my oven at 510 degrees convection and managed to get a good browning, but the batter was slightly larger in volume. I'm excited to find out how it tastes tomorrow! The Nordic Ware pan looks exactly like yours, except yours looks like it might be a silicon coated steel. www.amazon.com/dp/B07252Y92P/ref=twister_B088BMYZJD?_encoding=UTF8&psc=1 It's all-around smaller than the Fat Daddio's. I should have made 2 cheesecakes today, but it's a LOT for the two of us! I would want to try the first one I made in that pan, just for quality control😉. I will let you know how my experiment comes out tomorrow. 🤞😊
