I would love to have her as a professor! My favorite line of hers was in Order of the Phoenix, where Umbridge was listening in on Harry's career advice with McGonagall. After Umbridge mentions Harry's failings in her Defense classes, McGonagall says this: “He has achieved high marks in all Defense Against the Dark Arts tests set by a COMPETENT teacher." Also, McGonagall's sass during the Quidditch commentaries (Book 3, ESPECIALLY) was amazing ("JORDAN! ARE YOU BEING PAID TO ADVERTISE FIREBOLTS? GET ON WITH THE COMMENTARY!")

The fact that she’s now in her mid 80s and battled cancer in 2008 WHILST still working on Harry Potter and other projects amazes me what a legend

My favorite McGonagall moment isn't in the movies. After Harry gets the better of Umbridge in book 5, she knows she can't outwardly congratulate him, but she also doesn't want to scold him, so she simply says, "Have a biscuit, Potter." Being a teacher myself, McGonagall offering Harry a cookie after technically being insubordinate is a hilarious moment.
