RANCH SEASONING
6 tablespoons garlic powder
12 tablespoons dried parsley
6 tablespoons minced onion (dried)
3 tablespoons salt
2 teaspoons pepper
Add 2 tablespoons seasoning to 1 1/2 cups mayonaise and 1 cup plain or Greek yogurt
FISH CHOWDER
3/4 cup chopped onion
1 tablespoon butter
2 cups low fat milk
1 cup Ranch dressing
1 pound fish fillets
16 ounces frozen broccoli
2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
1/4 teaspoon garlic powder
Cook onion in the butter and add to all the other ingredients in a crock pot - fish on top. Cook on high for 2 hours.
PAULA'S THAI CHICKEN
2 teaspoons ginger
1 teaspoons cumin
1 1/2 teaspoons curry powder (we double or triple this)
1/4 salt (we add a lot more - to taste - at the end!)
1/8 teaspoon red pepper (go easy here if you don't like much spice!)
1 1/2 pounds boneles skinless chicken breasts or thighs, cubed
2 tablespoons vegetable oil (we use coconut oil instead!)
1 onion chopped
1 can diced tomatoes (14.5 oz)
1/2 cup coconut milk (we double or triple this part)
2 tablespoons mild curry paste
Combine spices with chicken and onion. Fry in coconut oil until onions are soft and chicken is cooked. Add tomatoes, coconut milk, and curry paste. Simmer together and serve over rice or noodles!
We love to top with green onions, cilantro, peanuts, lime juice, etc.
KENYAN RICE AND BEANS
We fry onion, garlic, and crushed or diced tomatoes together. Then add cooked pinto beans. Cilantro in the end! It's great, easy, healthy, and cheap-o!

We eat beans and rice literally every single day! I know that sounds strange but we live in Rwanda and it is our staple for sure! We actually grow and dry our own beans! Rwandan beans and rice is cooked very similar to Kenyan beans except most people don't add cilantro. I recently used your recipe for Ndengu and I loved it! So I look forward to trying to grow cilantro and add that to our beans. We get very little variety here so anything to make our daily beans more interesting will be so awesome!

I live in Puerto Rico and if you dont eat rice and beans EVERYDAY you haven’t had food at all and i hate eating rice everyday i can eat it once a week

My grandma used to make a huge pot of pinto beans and another of her rice. I could live off it! It is one of her specialties I never learned and regret it so so much. She was from Louisiana so everything she made had heaps of love and flavor (and I'm certain was not vegetarian at all lol). 💗.. I'm going to try the beans.. I may add some green bell pepper? I feel it would go well? We will see. Thank you for sharing!!

So nice to hear about generations of family canning. My Grandmother & Mom canned. They had huge gardens. I have had a couple of big gardens, but only got to can a few times. Tomatoes, green beans & corn. I have done frozen ears of corn that lasted like 6 months in the freezer. Really good. 😁

Yes to using kitchen scissors for herbs. I use it for lettuce, some other veggies and cutting up some foods smaller for my toddlers too. 😊👍🏽

My mother was the queen of “pot liquor“. When it came to seasoning beans, she would use small amounts of salty or fatty meats (salt pork, ham bones, smoked neck bones, sausage, chicken backs/neck/giblets). These meats always gave a wonderful flavor to her beans and rice. To this day my siblings and I still re-create her delicious recipes.

Everything looked good. I do like just non meat meals. My niece some years ago made a fish stew. I tried it but I just didn't like the texture. Since I have gotten older, I'm texture sensitive.....I try to do the brown rice mostly when I eat rice. Thanks for sharing.

I love that you have such a good cooking helper...my son also loves to help me in the kitchen and I have noticed a huge difference it made with his eating disorder (food aversion)..it helped a lot more than food therapy did. My son has special abilities..he can pour and stir things for me, and he loves to know he helped.

I’ve got over 2000 jars in my cellar of things I’ve canned. It’s so nice to be able to pull out ground meat or chicken and sauce, salsa, pickled onions or pickles or whatever it is we need and when I notice something is low, I make sure to get more canned. If you grow some tomatoes this year. Roast them in the oven with garlic and onions, put them through the blender and then season and simmer them to the thickness you like and you’ll have the BEST roasted spaghetti sauce you’ll ever have!

My husband grew up with beans and rice, so I had to learn how to cook them. They're great for your budget. Filling and tasty. I learned how to can when we moved to the country. Our potatoes wife taught me how to can. Always loved it. In the city now but if I ever get a big garden, we'll have home canned goods again. I have been using your ranch dressing recipe for a long time and my husband LOVES it. Doesn't want any other. Love watching your busy family.

I started canning too and I love it! I’ve canned chicken soup, and I’m sick right now with Covid. I just told my husband to heat up a soup for me to eat. It’s very helpful to have something already made specially soup. You just gave me an idea to make meat spaghetti sauce. Sounds yummy. Enjoy your canning adventure♥️

I cook 2 whole jalapenos (frozen from my freezer) in with my beans along with a quartered up onion and garlic. When the beans are cooked I add salt and pepper. I always remove the jalapeno and give them to my husband. Such an amazing flavor.

I'm glad you learned to can, so convenient for a quick meal. I was the oldest of 8 kids, my mom and dad also had a super large garden. My mom canned everything, we often cooked outside on an open fire to prepare some foods to can. She was a wonderful mother and cook, she taught me so much! Sarah, I loved watching this one! Very cool. I can also! Once you can your own tomato’s you will never use anything else! They are amazing. In your beans & rice, try adding some polish sausage, diced or in round shape, it’s so good. Or even try making it with a pan of corn bread as a side! It’s delicious& filling. Also I can give you a recipe for corn fritters or salmon Pattie’s sometime if you’d like. Delicious. You are amazing❣️ I love watching Jamerrill too. I need to tell you the story about my moms canning and how she lost a bunch of it one day… Micah I’d such a great kitchen helper. He and Judah are going to be amazing cooks. So are Belle n Tory. When I make taco bean soup we add in corn and chopped leeks (I use scissors when chopping herbs as well) lots of variations of beans bc I buy them dry and mixed. Top with sour cream, cilantro, my homemade pickled jalapeños, and crackers/tortilla chips, with hot sauce (: always tastes great every time. Easy to make as well.

I do appreciate the encouragement with beans and rice! I've been making lots and lots of beans and rice. Meat has been so so expensive here in California. We do have some chickens we need to process, but until then, lots of beans. We have been going more plant based again (used to be plant based completely). I love having fresh ideas, thank you for that!

When you cook the beans, put bacon, or a ham hock. Gives the beans a really yummy flavor. Makes the best burritos too yummm yummm

Smoked turkey wings or legs are great too - adds a great smoky flavor 😊 I'm vegan, but I make my mom's meals everyday and she always requests some to put in her beans/ greens. Says she loves it, but I can never taste test; only trust that she's not just being a sweet complimentary mom and she really likes the food 🤗

My mother-in-law makes her beans by cooking them with cilantro, onion and other spices but what she does to make it way more filling is cooking cocktail sausages in the beans. So yummy! I’ve adopted this recipe and serve it with rice too. I feel like the sausage gives the beans more flavor too.

@@laurab1089 whatever feels right 😂 almost a whole bunch that you can buy from the store sometimes. You can put the whole cluster of it in and take it out at the end when the beans finish cooking.

"Some of you think I am nuts"! LOL!! I don't think anyone thinks you are "nuts". Sarah you are a creative, hardworking wife, mom, pastor, sister, teacher and so on. You are teaching your children life skills that they can use for the rest of their lives. I went to culinary school as an adult and I was amazed by how many young students did not know the very basics of cooking and baking. Your children will know so much more than just cooking. All of your canning, bread baking, milling your own flour etc., are invaluable lessons. You are also showing everyone that no matter what your age, profession etc. that you can always learn a new skill. And you always look gorgeous -seriously do you ever have a bad day?

@@celiaedwards93 i eat this dish almost once in 15 days and as for seasoning it's mainly coriander powder, red chilli powder, salt and garam masala and process of making it is somewhat similar to shown in video

When you get ready to can homemade broth it helps to strain the fresh cooked broth and chill it over night in a big pot then before you get ready to can it you can remove the fat that's solidified on top. 😊

Ohhhh the littles’ big smiles!! 😭😭 So sweet!!! The beans and rice sounds delicious!! I LOVE refried beans or just mashed up pinto beans and rice mixed with red enchilada sauce. Leave the enchi sauce a little streaky, like not completely mixed in, then put some cheese on top (what isn’t so much better with cheese?!) Serve with sour cream and salsa, maybe even avocado/guacamole.. ohhh so good!!

The canned ground beef will be good for camper travel. You can cook pasta ahead of time and store in a plastic bag in refrigerator.

Another thing that would be good for camper travel would be a camping stove you can use outside. Cooking bacon and other things like that that require citrate cleanup.

My mom has always maintained a garden and a yard full of plants. I remember her canning figs preserves, they are such a great food memory. The fig tree was big enough that the neighborhood kids would come play and everyone had their own branch "horse".

You can also can chunks of boneless chicken breast, pork tenderloin, and beef stew meat. Ball canning book has some great recipes.

@@OurTribeofMany chicken breast was the first thing I learned to can! Super easy! We raw pack so you literally just cut it into chunks, jar it(no broth or water needed), add optional salt, lids on and into a cold canner it goes! I buy the case of chicken breast from sams club to do it.

Everything looked delicious! Can’t go wrong with beans and rice. I probably would add some bacon, or some kind of pork. I bet a couple ham hocks cooked in them would be delicious. You haven’t made your Big Mac casserole for awhile. Awesome video!

Sarah, I just admire you and getting all of these meal preps done! I only have a small family but I have go to quick meals that can be done in 30 mins or less time. One that everyone loves is “one pot red beans and rice” super simple smoked turkey kielbasa, onions, bell peppers, red kidney beans, seasonings and rice. The original recipe calls for white rice but we eat brown rice. Super filling and easy to make. I love that Micah is stepping up and becoming a big helper to you in the kitchen. You guys definitely are raising some pretty independent kids. There are so many kids out there that are way older and have no desire to learn. Your kids are a joy to watch! Thanks for sharing your meal preps and yes, we do learn a lot from you! Blessings, Sabrina

MSG is not bad for you. That has been a myth for quite a while. As with everything moderation is key. It definitely has a place in the kitchen.
