In this episode of Marianski March we make a Mediterranean Sausage called the Loukaniko Pitsilas. Drowned with wine smoked and air dried it is really quite a good sausage.

just got my 1001 sausage book today, as an executive chef I give this book full marks, wow, very well laid out, metric and a great glossary for sausages and headcheese... thank you Duncan, great recommendation. even read your review on Amazon.

I am only 3 or 4 months into sausage making/smoking, As good as it looks I think I will have to wait till my skill level is a bit higher for that one. And I am still working my way throught the first Marianski March book. But keep the videos coming, I learn something every time.

I’ve only been making sausage for about 6 months now and I’m amazed at how many recipes are out there. And then you show a book of 1001 recipes, unbelievable. I’m 62 yrs old and your videos are a wealth of information. Thank you for sharing your knowledge. I’m getting ready to make another batch and just trying to decide which one to make is the hard part.

one of the great thing I love about sausages, it incorporates what you have on hand, so in regards to your wine, well that's what you had on hand...perfectly legit... :o)

I'm from Cyprus and make these here in the States. There is one spice that is essential to this recipe that cannot be found anywhere but Cyprus. It's called Shinno. You get the wine profile without it but when combined with Shinno, you get a wine/earthy profile that is second to none. Shinno looks a lot like juniper berries but that are not the same or even remotely related. You should try eating these with some good bread and Halloumi cheese and thank me later. Excellent video, nice reaction to our native sausage. 👍👍

Good morning Duncan the texture of the sausage looks real good the wine and the heavy smoke may help in the curing process but I am with you 100 percent not making it without cures looks like salt pepper not sure on the green O by the way if you don’t mind you can just put me a book in the sausage stuffer after March on the way to Texas 👍 see you tomorrow

I've made the Loukanika recipe from the green book. A fresh sausage. It was flavoured with citrus and mostly lamb meat. Turned out deliscious.

Been loving watching your videos. As far as spices my best guess is since its Mediterranean there must be garlic and black pepper, after that perhaps cinnamon, maybe mace.
