The Vermont Food Venture Center is the Center for an Agricultural Economy's food and farm business incubator and food hub.

The reason why it's tart and bitter is because he boils the tomatillo until it bursts. If the tomatillo bursts, then, your salsa will be bitter and tart. It's not supposed to be tart and bitter. A white boy salsa is what you get.
