I’ve been making Melomakarona - Greek honey cookies, for as long as I can remember and I’ve finally perfected them. Make sure to use a great quality delicate extra virgin olive oil and Greek thyme honey for best results. FULL RECIPE BELOW.
RECIPE: MELOMAKARONA - GREEK HONEY COOKIES
Dough
1 cup Good quality fruity extra virgin olive oil olive oil (250 ml)
100 gm sugar ( 6 Tbsp)
90 ml orange juice (6 Tbsp)
25 ml brandy (2 Tbsp.)
390 gm pastry flour ( 3 cups )
120 gm fine semolina (3/4 cup )
1 tsp. baking powder (5 gm)
2 tsp. ground cloves (6 gm)
2 tsp. ground cinnamon (6 gm)
¼ tsp. Allspice ( 1 gm)
Nutmeg to taste
1/2 tsp. baking soda (2 gm)
Syrup
3/4 cup Greek amber honey (175 ml)
3/4 cup sugar (175 ml)
3/4 cup water (175 ml)
1 tsp. ground cinnamon (5 ml)
1 cup finely chopped walnuts, for garnish (250 ml), optional
* Additional Note about temperature of cookie . In video I said they were hot but I cooled them to warm before dipping them into the hot syrup. If they are too hot, they will fall apart.
Preheat oven to 350 degrees F
Whisk together the wet ingredients, with sugar and spices, in a medium bowl. Over a piece of parchment paper, sift flour, baking powder and baking soda 3 times.
Add the sifted dry ingredients to the oil mixture and stir with wooden spoon until mixture just holds together. Dough will not be fully smooth but should hold together. Note: texture of dough might vary depending on the protein level of your flour.
Pinch off about 1 1/2 tbsp. portions of dough (25- 27 gm ) and form into little flat oblongs (football shapes). Place on a parchment-lined baking sheet 2-inches apart. Bake in oven at 350 degrees convection F for 25- 30 minutes, or until evenly browned.
Syrup
Boil honey, sugar, water, and cinnamon for 8-10 minutes, until deep amber colour and slightly reduced. Remove from heat. While syrup is still hot, and cookies are warm but not HOT, using slotted spoon place cookies 6-8 at a time- into syrup for about 2-3 minutes, turning often to completely coat. Transfer to a large baking sheet or pan and arrange in a single layer. Sprinkle with chopped walnuts , if desired. Repeat with remaining cookies.
Makes about 36 delicious cookies( 25 gm each raw cookie dough )

I married into a Greek family. I've made pastitsio and spanakopita a few times for our son who loves Greek food. I have ALS and want to leave him with the most traditional Greek recipes I can find on the Internet. I found your video baking with your mom. She's the real deal! (No disrespect to you.) I so appreciate watching you make these recipes and will pass on each to my son and granddaughter. Thank you!!!

Many years ago when my sister was a newlywed she made a batch of melomakorouna that were talked about ever since. It took her at least 2 decades to replicate her magic. After the first time they were never as good until maybe 5 years ago. She came over and helped me make a batch for Christmas and then I did a batch on my own. They were both phenomenal! She insisted on vegetable oil, but I have no problem with the olive oil. The magic is truly in the Greek honey! I will try your recipe very soon. Ps. I did note that the brand of Greek honey you used was not visible ;)

Made them, love them, and so do my friends! Quick question (maybe silly): I had syrup left over and put it in a jar in the refrigerator. Will it be good enough for my next batch or should I make it fresh?
@ChristineCushing
@ChristineCushing 2 года назад
Ahh there are not silly questions. My husband keeps the extra syrup in a little jar and then heats it up and drizzles it on each cookie he's about to inhale.. ( hilarious). You can keep the syrup and bring it back up to the boil by adding some more water to loosen it up., It might start to crystalize ( common ) . I hope this helps.

@ChristineCushing

Yes, by dipping hot cookies into hot syrup they absorb more of the syrup and become almost cakey. Otherwise the syrup will mostly sit on the outer edge of cookie and be more crisp inside. I hope this helps. Thank you

I have a question on the pastry flour measuring, 3 measured cups of my pastry flour is only 320 grams, I would need at least 4 cups to get to 450 grams as per your directions. Should I use3 cups or 450 grams?
@ChristineCushing

It must be the protein level in your flour , so I would say to use 450 gm, that would be most accurate. Olive oil is ideal in this cookie. When you use a good quality Greek olive oil it is fruity , spicy and really completes the flavours. Thanks

I do not recommend this recipe, to crumble completely fallen apart and I used exact amounts as given 👎🏻last year I used different ratios and was perfect what a waist of product

I'm so sorry your cookies did not work. As I have just made them this week, I am wondering how you measured the ingredients , did you use semolina, soft flour etc. ? This is a really great recipe. Thank you
